薑蔥炒蟹:
材料:
肉蟹1隻
薑10片
蔥2束
調味料:
生抽1湯匙
糖1茶匙
生粉1湯匙
水150毫升
處理:
1. 薑刮去皮,洗淨,切片。
2. 蔥切去頭尾,洗淨,切段。
3. 切去蟹腌及蟹鰓洗擦乾淨。
4. 取出胃囊。
5. 開慢水喉,洗刷乾淨蟹的各個部位。
6. 蟹鉗的關節1開2,用乾淨毛巾包住,用菜刀輕拍一下,以放便進食。
烹調:
1. 用大火放4湯匙油落鑊燒熱。
2. 放薑、蔥入鑊爆香。
3. 加1湯匙生粉在蟹上撈勻。
4. 放蟹落鑊。
5. 蟹蓋內沾上生粉後放入鑊中。
6. 大概煎了2分鐘,反一反蟹。
7. 加入水150毫升、生抽1湯匙,及糖1茶匙攪勻放入鑊,大火冚蓋焗2分鐘。
8. 2分鐘後炒勻蟹件,最後加入蔥段,再炒1分鐘,上碟。
Fry crab with ginger and green onion:
Ingredients:
Crab 1 No.
Ginger 10 slices
Green onion 2 Nos.
Seasoning:
Light soya 1 tbsp
sauce
Sugar 1 tsp
Tapioca starch 1 tbsp
Water 150ml
Preparation:
1. Peel ginger, rinse and slice it.
2. Cut both ends of green onion, rinse, then cut in equal lengths.
3. Remove abdomen and gill of crab. Rinse thoroughly.
4. Take away its stomach.
5. Turn on tap, brush and rinse each part of crab thoroughly.
6. Cut claws into 2 shares. Wrap crab with a clean towel, use chopper beating on claws softly.
Steps:
1. Heat up 4 tbsp of oil at high flame into wok.
2. Put ginger and green onion into wok and fry for 1 minute.
3. Mix crab well with 1 tbsp of tapioca starch.
4. Put crab into wok.
5. Put a thin layer of tapioca starch on crab shell in and out, then put into wok.
6. Flip over crab after frying for 2 minutes.
7. Mix well 150ml water, 1 tbsp light soya sauce and 1 tsp sugar. Pour the mixture into wok, turn to high flame, cook for 2 minutes with the lid shut.
8. Stir fry crab well after 2 minutes, put green onion, fry for 1 minute more. Serve.
