Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. Been hooked on your bbq videos! I’m currently deployed for COVID response in the military. We don’t have a kitchen but we do have a microwave-that’s how I get my meals vs the chow hall. I got into whetstone sharpening after watching your collab with burrfection and was able to get my cheap Walmart knife to push cut through magazine paper. I have no doubt that a knife of this caliber would hold its edge and be a massive step up for me. Also, great video and thanks for spreading bbq love!

Harry I’m continuing to enjoy all of your videos. I’ve even got my ten month old little boy watching along with me. He love helping daddy in the kitchen already. Showed him how to push the pulse button on my processor, it’s his favorite kitchen duty. I have several white handled restaurant quality kitchen knives. This Dalstrong Santorum will be a great addition to my collection to pass along when my boy is knife ready. Keep up the great content, love this rib recipe!

I'm gong to try the jar recipe for convenience but also because Mr. Beans has never let me down! The knife looks great, it slices so smoothly and is the perfect utensil for a conniseur! If I won it my wife and I would call it the "Harry" and we'd use it daily.

I’ve been barbecuing all my life but I have taken it to a new level since I started watching your channel. I used to makeChar Sui from the bottle all the time because I loved it until I saw your video comparing it to the Walmart made brand. Yours with the 2000-year-old recipe is so much better. I have taken all the bottles of premade sauces that I used to have, barbeque and Asian, and throwing them out since I discovered your channel and saw your episode. The work is So worth it. One tastes chemically enhanced and one tastes natural with many layers of depth. You are selling yourself short. There’s no comparison between the two. Sorry Mr. beans I have to disagree with you for the first time. Your knife giveaway would be awesome to win but your recipes are the reason we watch your channel. Hi Harry! My hubby watches your videos all the time in his quest for knowledge of all things BBQ! We currently do not have a Dalstrong knife. In fact, I hate to admit this, but it wasn't that long ago that I realized just how important a quality sharp knife is. We don't have an entire set of anything but now have a couple Henckel and a couple Wusthoff knives, but still no Santoku. Have watched the various Dalstrong videos and would LOVE to try one of theirs! Thanks Harry and keep on cooking! :)

Yo Harry! It’s me Larry! Dude, I have become the “BBQ Guy” on my cul de sac in the neighborhood, and have been spreading the BBQ goodness here in San Diego for over 4 years now. Mainly pork shoulders and briskets, large birds and my soon to be famous smoked chili all cooked with lots of love on my 22.5 WSM (with Jealous Devil Lump of course). My Mom gifted me a Dalstrong about 3 years ago and it is a Shogun Series 8" Butcher & Breaking Cimitar knife. By far the coolest and best knife I’ve ever owned!! Outstanding quality. Anyways, I’ve been a Sub for about 2-3 years now and I really dig your channel, it’s guided me the right direction dozens of times and is appreciated. This knife would be my second Dalstrong and a huge addition to my current cutlery setup. Cheers either way and tell Mr. Beans I said Hi! 👋

I think I'll give the 2000 year recipe a try, just need to pick up the red yeast, I mean, if the recipe is still here after 2000 years, it must be pretty good. Give the knife to someone else Harry, I'm set for knives.

Harry I have wanted a good knife, but haven’t brought myself to pull the trigger on something so nice. Living in Alaska I regularly prepare Moose, caribou, bear, halibut, and salmon. I am always experimenting and honing my BBQing skills. I have recently started dry and wet aging some cuts. This knife would be a great addition. As with everything I own, this knife would be used well and taken care of with the upmost appreciation and respect. I enjoy your channel and learn a lot. Thank you.

Please check out Japanese Chef Knife site..they have the best steel on the planet from many different famous makers, from extremely affordable (cheap) knives all the way to thousand dollar sashimi slicers..

As a long time user and fan of Wusthof knives, that Dalstong is one sexy looking blade. I'm liking the handle shape. I could see adding some of those to my arsenal. Also love me some Char Siu ribs. I've only ever had them at restaurants, but after seeing you do the throw down, I'm adding this to my rotation.

I like sharp knives, and I cannot lie.... ! Food prep takes on a whole different dimension when using a freshly sharpened knife. I know this from field dressing my game to preparing meats and veggies in the kitchen. I would love this Santoku knife by Dalstrong... it looks like it would feel great in my hand. It's not too surprising that the 2000 year old recipe has a depth and complexity that the commercial product lacks. After all, the factory made sauce is made to produce a profit, not the best flavor. I love the traditional recipe! We'll have to give it a go on our next rack. My wife is Asian and we already have all the ingredients in the cupboard. What we don't have is an awesome knife like the Dalstrong. It would have pride of place in our kitchen! Lon and Eyi.

I've spent my entire life using very bad knives. In the last year I've started to upgrade to better knives, but find the expense of a really good knife is outside my budget. I've recently bought my first smoker and that's how I found your channel and find your advice to be very informative to learn to bbq just a little better. Thanks.

I have never had a great knife like the Dalstrong. I am a firm believer that more people cut their self on a dull knife than a sharp one. I would be in seventh heaven to own a knife like a Delstrong. As always I love your videos keep up the good work

I'm in the process of buying new knives as my old ones are a cheap set and it's time to grow up and buy something that cuts, not shred. Been eyeing the Dalstrong as they seem solid and have a great reputation. That knife would be a great first piece in my quest for new knives.

I watched like 3 hours of you and Burrfection sharpening knives, borrowed a friend's whetstones - mostly the same ones you guys were using and sharpened all my knives at home. I don't have anything nice other than a pretty nice nakiri. Didn't do as good of a job sharpening them on the whetstones but at least they're sharper than they were before! Love the Cantonese style BBQ pork. Those ribs must be amazing. Hi Mr. Beans!

I don't have much of a collection of knives all I have to use is a the big Chinese butcher knife. I used that for trimming brisket to slicing, trimming ribs to cutting them into pieces. Basically my everything use knife. Definitely love to smoke anything from chicken to beef to pork. So this knife would be a great help on preparing things with ease. HARRY! I only have 2 knives to my collection, a 6 inch boning and a 12inch slicing from dexter. This Dalstrong would be outstanding to have. That’s a beautiful knife! My kitchen currently has an Old Hickory 10” butcher and a Chinese Carbon Steel Vegetable Cleaver (Choy Dao). I keep both in good working order with a Wicked Edge sharpener. A Santoku would make a great addition to my arsenal as a nice medium blade.

Harry, first of all I love your vids! You inspire me to improve my bbq skills and creativity in the kitchen... I spent a few hundred dollars for my birthday, on some handmade Damascus steel knives. I am not happy with their performance and wished I just went big on a few solid Dalstrong pieces. When I saw your post of this video, my eyes lit up 🤩. Another great video. I only use your methods for BBQ. Thank you for sharing your knowledge. My friends and family always ask when am I firing the pit up again. I have been looking at the Dalstrong knives for awhile now. Just waiting for the extra cash to pull the trigger and order them. I was gifted a Dalstrong pairing knife by my Mother a few years back and I absolutely adore it. It takes a very fine edge and holds it extremely well. I’d love to add that Santoku to my collection! Thanks for another great video and thanks for teaching all of us how to spread BBQ love!

Hi Harry. Another great video. Always enjoy your videos I have learned a great deal. The jar might work but there is something special about making your own rub or sauce, so satisfying. It would be an honor to win the Dalstrong knife have heard nothing but great things about the knives. Harry, I think I'll try adding a little extra ginger and garlic to the store bought stuff and kick it up a notch just like my mom always did to her cooking. As far as knifes, I can't say I have a quality knife like the Dalstrong. I can say tha thet size and blade design you were using would get used a lot by me and my wife both and I do have the capability of sharpening it. Thank you for the opportunity buddy! West Texas.... I just bought my first smoker ever, and found you while researching how to make a brisket for my first smoke ever. I was so excited about cooking it I forgot to get a knife to cut it. This knife would be the perfect start to my collection of Dalstrong knives.

The knives I currently use are well over 14 years old. Not the best quality to begin with and I'm surprised they've lasted this long. I could really use a good knife that holds its edge well!

Thanks, Harry, for another objective, helpful review. I was wondering if you would suggest adding ingredients to the store bought version to add complexity as you have done with other sauces in the past, i.e., possibly some honey, ginger, etc.?

I think the honey is a complex sweetener. The red tofu helps as the fermented tofu has a lot of natural MSG

Great video Harry. Right now I'm using Wusthof knives and they are very good knives. They hold a very sharp edge too. I'd like to try another brand of knife but great knives are very expensive. Thanks again Harry for another great video.

Hi Harry, Long time subscriber of Slap Your Daddy BBQ. I just bought my grill and started BBQ again after watching you videos. I even rewatch them to try out the recipes and for black belt tips. I would love to have a nice and duruable Dalstrong blade to help split ribs, cut up tri-tip, ribroast and other cuts of meats as i expand my BBQ setup. One of my first ribs recipes as a teenager was a char siu smoked with tea in oven. Another was Asian five spice dry rub with brown sugar and syrup as a binder. Love the asian fusion.

I’m of the personal opinion that while the jarred sauce is convenient being already prepared, the homemade sauce is far superior for being able to make it as one wishes it to taste. For me, I love the tastes of both the hoisin sauce, a lot of garlic, Shaoxing wine, and extra five spice, and I find myself having to tweak the jarred version to fit my preferences. Last night, I made just over 11 pounds of char siu pork butt, which I plan to cook some of today for the weekend, and package and freeze the rest for when I want it. I made my own sauce as I usually do, and I love to do. I see nothing wrong in and of itself in using the jarred sauce, and no one is wrong for doing so, and one can always tweak it with their own spices and seasonings. I find making my own sauce more cost effective as I make a lot of char siu every month and it is a staple food in my diet, and buying 4-5 jars of the prepared sauce is just too expensive for me to justify when I have all the soy sauces, oyster sauce, five spice, sugar, maltose etc to make it myself.

Just got into BBQ when the covid started. Your channel and Baby Back Maniac have been helping me to step my game up. I saw your video with Ryky over at Burrfection and picked up a couple wet stones to sharpen my european knives. But after watching a ton of videos on sharpening I have been really looking for a japanese knife after a lot of research, Dalstrong looks to be the leader in the bang per buck category and getting ready to pull the trigger. Then this video came along and well fingers crossed. (PS) looks like i subscribed when i was signed in to my alt account (Ronald McDonald) but I have now subscribe with my man account also

For our 15th wedding anniversary my husband wanted to get me a beautiful necklace, but I asked him for a set of Dalstrong knives as those are more practical than a necklace :) I love every single one and use them often while prepping my meals.

Long time fan of your channel. I have learned so much over these past few years it's absolutely incredible, and my family really appreciates my upgrades in skill level lol. I've been using cutco knives for a few years now and while they are good they aren't great. I would love to have a true chef quality knife to finally add to my collection.

I was gifted a Dahlstrong gladiator chef knife for my birthday and I absolutely love it. I’ve become a fan of Dahlstrong knives and am saving up for their boning knife for trimming briskets and other bbq meats. If I win I’d put it to work but if I don’t I’ll probably end up buying more of their knives and will continue to watch your videos and spread bbq love!!! First Harry, I love your videos and have learned so much. My wife and I were judges on the MBN circuit. I would love to win the Dalstrong knife , not for myself but for my son. He has become so chefy and needs a great knife. Several years ago we bought him some knives that we thought were quality, like some we had, but they were very cheap and light weight for a big name brand. My son is a musician and song writer in Nashville and like all musicians these days, they are really struggling because all music events and concerts have been cancelled because of the Corona virus. Needless to say, I know that he would love this high quality knife. Again, I really appreciate all that you show and teach. My wife just loves Mr. Beans. Thanks again and blessings.

as usual it is great to see a real honest review! I sure could use that knife because I was growing my fine knife collection when a family member (I won't say who because I still need to share a bed her) sold some at a garage sale! Yes, I, like most of us, had numerous knives that throughout the years would get better and better in quality. She thought it would be good to get rid of some duplicates, but she chose the wrong ones....someone has some very nice knives for very little money! Thanks!

Hey Harry great video as usual. I just started getting serious about Bbq since I’ve been in quarantine. I’ve been hooked on your videos since seeing you with TRoy and Baby Back Manic in Texas. Your videos are great and very informative explaining the science and while building great flavor profiles. I’ve been mainly doing ribs and chicken but After watching several of your brisket videos about selection and preparation, I had the courage to cook my first brisket for July 4th. I used your hot and fast method and used the Lea pearrins as a binder slap yo daddy and injected it with the grain and finished it in the oven because BTU is BTU is BTU... My family went crazy over the brisket. They are still going crazy over it. I didn’t have a god knife to cut it right and make it as professional as you do in your videos. It would be great to have an awesome knife to go with my next Harry Soo awesome brisket.

Hey Harry I just bought a Dalstrong paring(phantom)&boning(gladiator)from your recommendations and others.It seems among the BBQ Pitmasters it's either Dalstrong or Shun.I just sliced up a raw packer brisket(for grinding )using the Dalstrong Boning Knife.The Santoku would have made the job much easier.

Hi Harry, I think it's great of you and dalstrong to host this giveaway. It's a good way for up and comers to add to their collection of bbq tools. I'm happily married and a proud father of 4. My kids are young and we live a busy life, but I do take my BBQ seriously. My kids already show interest in helping me cook and they like to watch pitmasters and youtube bbq videos with me. I've been watching your channel religiously for quite awhile. I aspire to get into competition bbq someday. I enjoy making my own rubs and sauces. Your videos have always helped me along the way. I can't tell you how many times I've had a Dalstrong knife in my online shopping cart but haven't pulled the trigger...
