Since discovering BA, I’ve never gone back to Tasty. I hardly even liked them before, they’re all about getting photos and views, but their recipes aren’t always the best. Look good but don’t taste good. Sometimes their measurements on their website are even different from the ones in the video so ??? BA is real, actually have dedicated chefs, and spend time making their best recipes. And their chefs are so much fun and relatable. Love them and would pick them any day over Tasty 🤩

Yeah I think the difference is that BA has actual professional chefs, whereas Tasty has very good, albeit amateur chefs. The professional chef will almost always come out on top.

I felt the same way after discovering BA. It's as if they've opened my eyes to a new world. I used to enjoy Tasty more in the past, but they don't elicit the same kind of interest and emotion from me the way BA does.

It's not really surprising that BA's recipes are better. BA's been published since 1956 and their whole business is food. Their recipes go through dozens of iterations and tests before they get published (yeah they make videos, but their main business is their magazine). Tasty's recipes seem like they get slapped together in a couple hours, and to my knowledge the only Tasty producer who actually has any culinary training is Rie.

tasty lacks management directions, Rie, Alvin, Alexis and many others did have culinary training but they arent fully incharge of what they get to do unlike chefs at BA.

@@blotter-water the oil actually looked hot enough. they started sizzling as soon as they went in. plus he had a thermometer so i doubt that was the reason for them coming out so oily. his dough must have been too wet. he should have added a little more flour into the batter.

@@Aysh100 ok lets break this down with what we know based on this video vs. BA's video. in this vid he has two different recipes. Same pan, I'm assuming he used same oil for both recipes and if he didn't then that would be really weird but lets just say he used the same for both, and thermometer present in both (which by the way upon closer look the thermometer is touching the bottom of the pan so he's actually not getting an accurate oil temp reading and he might as well have not even used a thermometer, but there was still more than enough of a sizzle when he did start frying so its all good and again not the issue here). what's the difference? the recipe. with the tasty donut, it wasn't greasy and was more bready. he even says its too bready and thats the issue vs. the BA recipe which was too oily. notice how flat, full of holes, and greasy the crumb is in his BA donut. then go look at the end result of BA's video. It's more dense and fluffy and actually when chris started frying it appeared there was actually less of a sizzle to the oil than what david had. if you compare david's dough with BA's dough, you can clearly see how much wetter it is. it didn't pull away from the sides when kneaded, and there was way more sticking to his hand. Yes BA's dough was still wet but not nearly as much as david's. If you want a lesson on flour then keep reading. flour based recipes are all about ratios of flour to pretty much everything else like leavenings, liquid (this includes sugar), and fat. if it's off, then so is your end result. you can measure out a cup of flour but it doesn't mean you are measuring out the intended amount that the recipe calls for. I did an experiment once with a recipe that called for 100g flour which was supposed to be the equivalent of one cup. the recipe suggested that as a workaround to not having access with a food scale would be to sift flour over the cup until full, then carefully level off. first, i did the whole scoop and shake to level (aka amateur method). ended up with almost 70g or 80g more flour than the recipe called for. that's a significant difference and closer to twice as much needed flour than not. that can really change the end result of your bake. then, i painstakingly followed the advice of the recipe and did the sifted method. it was actually a lot closer to the 100g (115g to be specific). still was over measured but perhaps not enough to make a significant difference to the ratios. moral of the story? flour is a pain in the ass and its easy to either over or under measure by way of cups, especially if your other ingredients have not been measured completely accurately. (by the way side note to this experiment, don't go and think you can convert an american standard recipe to metric using 100g per cup of flour as a reference. american recipes in cups are already accounted for flour being more compact when measured, but still leave much more room for error. baking really shouldn't be left open to interpretation like that and kind of why it bothered me in BA's vid when they said they wouldn't be weighing ingredients out to make the recipe easy. i mean they should know better but I get it, not everyone has a food scale and people tend to complain when everythings in metric.) but back to the error of david's way and the greasy donut where we have already determined that oil temperature is not the culprit here. there was a lack of structure due to lack of flour. too much fat in the dough and when met with the fat in the oil, think of it as like when you add one liquid to another, they mix whereas a solid will just be immersed in the liquid. same concept here. if you look closely when he shows the inside of david's BA donut, you can see how the fat leeched out of the dough, left holes behind, and made its way to whatever side of the donut that spent more time in contact with the oil/the bottom. and if you're really curious, those holes are specifically because he used fats that contained high water content like butter which cause a kind of pop when heated. (you can see that in BA's vid when he's microwaving the butter and it explodes everywhere, and its why you get a flakier result with something like biscuits when using butter vs. a softer, cakier texture if using shortening which contains no water). Holes like that and lack of structure overall are not caused by oil being absorbed in. quite the opposite, actually. oil leeched from the inside out, and essentially opened up the gateway for oil to then be absorbed from the outside in. if there had been enough flour, it would have instead created the desired seal around the dough once it hit the oil, and not absorbed it excessively. oil temp does not solve the issue when you have a greasy dough to start off with. with chris's dough, he had the ratios right with his fat to flour, and that is why he had good structure and the only thing that happened was his desired result of getting the cracks on top from the water based steam escaping from the top and not in the form of pockets/holes throughout the dough, minus obviously the water moisture that did come in contact with the oil which accounts for there being any sizzle at all. so no, cooking at a higher temp would not solve the problem. if anything it would make it worse because you would just cook out more of the water based moisture, and not in a good way because you'd just be left with something crunchier, but still greasy.

My advice for the glaze is to ignore whatever liquid measurement recipes tell you to use. Instead add the liquid in small portions (like a tablespoon at a time) to the powder sugar until it dissolves. You’ll find that you never really need as much as recipes tell you to use

that's what chris said in his doughnut video, but i remember him also saying that he made a very thin glaze on purpose so it won't overpower the doughnut flavour and just will give them a little shine, nothing more. there's a reason for chris' thin glaze. tasty's was alright, just as david said himself, he just didn't let doughnuts cool, so glaze just dripped away because of hot surface.

B.A.'s probably always going to win these just because of who they are. They've been a food magazine for over 60 years, and a have a staff full of chefs who test every recipe. Then there's Tasty which is just food-based clickbait. No matter how you slice it, that's just what they are. So, they're both from two completely different worlds.

I used to love tasty, but after a while, I realize that Ive fallen into the buzzfeed trap. Tasty and buzzfeed are the same. BA on the other hand, is just so much better. I feel like BA tests every possible recipe. I can tell they put much work. Tasty is for views, BA is legit.

2:57 With yeast doughnuts usually, just like bread, you want them to have a rise just before cooking. If they're not nice and puffy & full of air before frying they won't be good. I'm stunned Tasty didn't mention that.

Just a quick tip dont twist the ring molds as you cut out the doughnuts. It can seal the edges and reduce the amount the doughnuts rise. This is probably one of my favorite series btw

All of a sudden I've realized that I stopped watching Tasty's videos altogether (they just disappeared from my feed and I never bothered to look'em up again), but I'm still watching David's videos XD (even if I'm super late on my subscription feed and I'm watching this in March 2020).

Was your oil temp too low on the donuts? I didn't see you taking the oil temp. Too low oil temp can cause a greasy fried item.

@@Melza01 The temperature wire thingy is called a thermocouple. It may also be an RTD. Anyway, thanks because I didn't notice that before. Thing is, it looks as if it is on the bottom of the pan, which would read hotter than the oil temperature. Or maybe it was still at the wrong temp. We didn't get to see the temperature display.

Bon Apetit will always win. BA works on their recipes for days to attempt to make the best kind of food. Tasty makes it quick, easy, anyone can be a cook, but it takes away from the roots of cooking which is tweaking, working hard and staying determined to make the best of the best.

David always says that people discover him because of tasty but I got suggested to watch him once he started doing Claire's videos from BA.. anyhow I am glad I have David in my life to binge watch during my quarantine :D

You know BA's gonna win cause of how much time the chefs there put into developing their recipes (especially if they're going to be put into their magazine) Plus, they mostly have professionally trained people who've been to culinary school.

here i am as a dunkin donuts employee to answer your questions david. most of our donuts use the yeast base, that's donuts like the glazed, chocolate frosted, strawberry & chocolate frosted with sprinkles, boston creme and more. but some of our other donuts have more specific bases, for example the blueberry, chocolate cake donuts, and well, sour cream donuts. so long story short, yes, we do have a sour cream base but you'll only find that in the sour cream donuts.

I mean Bon Appetit is a group of trained professional chefs that cooked and tested their recipes many times over with experts. While Buzzfeed’s recipe is made by people that can only best describe as home cook.

Not only does BA have the best recipes but they also have the better channel. I used to watch tasty all the time but after finding BA I’ve forgotten everything I know about tasty and I’m not mad about it

Chris explains in the video that if enough flour isn’t used and the donut surface becomes broken then more oil will seep into the donut. That’s why he said to use a lot of flour so it wouldn’t stick, and is what probably caused your problem :)

When I first started watching David I thought he was a culinary student or something. And then in one episode he sliced a piece if raw chicken in half and he was like "I think this is called a butterfly cut" and I was like oh... Guess he's not lol

Even thought I’m team BA all the way - if it makes you feel better, I feel like the channels are catering to 2 different audiences. Tasty is more for the people who just want to try things out in the easiest, most accessible way. Bon Appetit is for more of the foodie who is a little more into the process and stuff, if that makes sense, so their recipes are gonna be more advanced (and usually better tasting because of it). Also, yeasted donuts and sour cream donuts are definitely different (obviously - not trying to educate there, just pointing it out) so just because you didn’t like Tasty’s doesn’t mean their recipe is bad - you just prefer the texture of a sour cream (or in this case, yogurt) donut! Hope that eases your conscious, haha

I would chose BA every day, any day. The chefs on BA all have amazing and fun personalities and the editing is so on point. Tasty's recipes don't always work well, I've tried their cheesecake recipe and "best" chocolate chip cookie recipe and both flopped :( however, I do like the diversity of people on Tasty.

Don’t even put tasty and BA in the same tier... tasty makes cute shareable videos that flaunt basic tecniques with cool video editing; BA has exceptional chefs, draws in recipes that are complex yet simple and top notch with no fuss but still at a professional level.

The donut sticks at Dunkin donuts are UNBELIEVABLE. Then I moved to Phoenix and Dunkin Donuts didn’t carry those out there 😭🙌🏾

Baker here, a couple of notes. He mixed butter with the liquid, which is a no-no for a rich bread. Butter in large amounts should come last of the kneading process, or else it would not knead well. Because of the first point, he added way too much flour while kneading so that it won't be sticky. His dough looked dry, and it didn't rise properly. Different temperatures and different environments lead to varying results to rising times, since he doesn't have experiences, his bread was way too underfermented. The final product also looked overcooked and I'm sure it tastes oily.

Im honestly never going back to tasty after discovering BA, not only do they have better recipies and actual professional, you can also really tell they actually love food and care about the recipes they put out, not only about the views and having a viral video

In tunisia we call the bon appetit recipe 'YouYou' the only difference is that we make it smaller and it's so delicious. Edit: and for the glaze we actually boil the oil then add the sugar and half a lemon and it's supposed to be very thin.

Tasty really revolutionized how people view cooking - its video format made things seem a lot simpler and more approachable. But I think Tasty knows that most people watching are there for the food porn and not for the recipe itself. Bon Appetit creates recipes that they hope people will actually use. The videos are secondary. Both certainly have a place in today's food scene, but I'd be shocked if a Tasty recipe ever beat a Bon Appetit recipe head to head.
