SOFT AND FLUFFY GLUTEN FREE DINNER ROLLS
INGREDIENTS:
Dry Ingredients:
¾ cup brown rice flour (3.1 oz.)
¾ cup corn starch (3.6 oz.)
1 cup tapioca flour (4.0 oz.)
1 ¼ tsp. xanthan gum
½ tsp. salt
2 tsp. baking powder
Wet Ingredients:
2 large eggs (room temp.)
1 tsp. apple cider vinegar
3 Tbsp. butter
Yeast Mix:
¾ cup hot water
3 Tbsp. sugar
2 tsp. Active Dry Yeast
GETTING READY
1. Generously grease a 8X8 baking dish
2. Set out butter to soften
3. Set out eggs to bring to room temperature
LET’S GET STARTED
1. Start by mixing together your dry ingredients in a large mixing bowl: add your brown rice flour, corn starch, tapioca flour, xanthan gum, salt, and baking powder. Whisk together.
2. Now in a microwaveable container, heat your water to 100°-110°. In my microwave this takes about 25 seconds.
3. To the water, add your yeast and sugar. Stir and set aside for 5 minutes to proof. (We want to make sure that the yeast is alive).
4. While the yeast is proofing, combine wet ingredients into a medium mixing bowl: eggs, apple cider vinegar, and butter. Mix together.
5. Pour the wet ingredients into the dry ingredients. Mix together to form a crumbly mixture.
6. Now take a look at your yeast…if it’s foamy, your yeast is alive and you may continue to step 7. If it is not foaming, you may have a bad package of yeast. Open a new package of yeast and re-proof. Continuing with inactive yeast will be a waste of time and ingredients.
7. Now add your active yeast mixture into the batter and mix for 7 minutes. (yes…7!). Gluten free flours behave differently than gluten flours, and the extra mixing time adds more air to the dough (to help the rolls rise), and adds to the structure of the roll.
8. With a 2-inch scooper, make 9 mounds of batter in your baking dish. Each mound should only be about ¾ of a scoop.
9. Cover with plastic wrap and let rise until doubled. This usually takes about 50-60 minutes at my house, but time will vary depending depend on the warmth in your kitchen.
10. While the rolls are rising, preheat your oven to 375°.
11. When rolls have doubled in size, bake, uncovered, for the first 15 minutes.
12. After 15 minutes, cover loosely with tinfoil to avoid over-browning. Do not seal tinfoil around edges of pan.
13. Bake 15 minutes more
14. Bake a total of 30-32 minutes depending on how golden you want your rolls to be.
15. Remove from oven
16. Brush with melted butter and serve warm. These rolls can be placed onto a serving dish and served as pull-apart rolls, or you can pre-cut the rolls and serve in a bread bowl or basket.
Tip: Cover with plastic wrap to store overnight. These rolls re-warm nicely in the microwave.

This is GREAT!!! We are a family of 8. Three of us are gluten free. Your recipe has won over my super picky wheat eating aon. He said "this tastes like real rolls". Lol, he woke up asking could we make more. He actually calculated how many pans our oven could fit. We will make more and try additional recipe's. Hi Miss Linda: My name is Rose and we are from New Orleans. I just subscribed to your channel. I simply adore your video, mainly your style; it is crisp, clear and easy to follow. And thank you so much for the detail explanation. It's the little details that matters sometimes as it shows you put so much love and care in your work. I have 5 kids, one grown and 4 school-aged kiddos. The 4 younger ones (10,11,12, and 13) were siblings who my spouse and I adopted a year ago who were separated in various group homes for many years. They never had much of a normal life before at all until we got them. I cook and bake just about daily and I am so glad I found your channel. I have been looking for great GH recipes simply just to reduce gluten in my diet. My family is not allergic to gluten, but I am allergic to lactose. I just love to cook for these kids and most of the time I don't eat what I cook as I can't have the cheese or milk in the ingredients, but I want my kids to experience what it is like to have a good and loving family life. I am ordering all the GH stuff I don't have and will be making these as soon as they arrive, mostly probably early next week. Great work and I will be looking at your other recipes as well.

I know this is old but how much arrow root did you use? This would benefit my son greatly! I’d like to find a egg replacement too but I know that’s a stretch.

Thank you so much!! Many of my friends and family can't have gluten in their diets as well as other allergens and it can be really time consuming and unsuccessful to replicate glutenous baking to an exact science. This has made prepping for Holidays a million times easier. I can't thank you enough.

They look amazing. I’ve been fooled by supposedly fluffy, delicious GF rolls many times. I had given up on ever having one ever again. However, because you did not end your vid when they came out of the oven, but removed a roll and showed it--I’m going to give them one more try. Thank you!

Looks delicious. Can you help me with steps of how to make these ahead of time, take to someone else's home and reheat these there? Would I forego the butter on top until after reheating? Would I pull these out of pan after baking and cool on wire rack? Maybe bake them in Pyrex lined with parchment paper that is greased?

I put a paper towel in the zip lock before freezing my gf bread. It really helps so they don't crumbled. I am going to try these rolls they look great.

Hello Australia!! I love hearing where everyone is located...even though we're all over the world, gluten-free brings us all together in a nice little community! I'm so glad you like the rolls. If you plastic-wrap the leftovers and put them in the fridge, you can microwave them the next day :)

@@ziascanvas6895 Hi as a fellow Aussie can you tell me where you got the corn starch from as I have only found corn flour and was told that these are different? so much want some decent bread after 20 years of not eating any because the commercial ones are yuk !! ( and give me stomach ache from all the preservatives etc)

Do you know if I can use potato starch and sweet rice flour as substitutes? Also, I can’t use xanthan gum I have to use psyllium instead. Do you think that will work?

Can you scoop and cover them and refrigerate them till it’s time to bake them? Wondering if they’d rise, just a little more slowly in the fridge. Wanting to make them for Sunday lunch but don’t want to have to wait for them to rise after we get home!
