This pizza crust has all the qualities that I love in pizza…a chewy texture, a slightly crispy crust, and just enough sturdiness to hold all the toppings that I want. My family says that they would never know that this is gluten free pizza. Success! This is a delicious pizza crust that you will want to eat, instead of one that you just tolerate (like that pathetic cracker-like stuff that tries to pass itself off as pizza). This recipe represents much trial and error in my kitchen, and I’m finally happy to say that I LOVE THIS PIZZA CRUST and I’m proud to share it with you!

RECIPE:
TRADITIONAL STYLE PIZZA CRUST gluten free
INGREDIENTS:
¼ cup brown rice flour
¼ cup white rice flour
¾ cup potato starch
½ tsp. salt
1 tsp. xanthan gum
1 tsp. garlic powder
1 tsp. baking powder
1 tsp. olive oil
2/3 cup hot tap water
1 ½ tsp. active dry yeast
1 tsp. granulated sugar
1 tsp. unflavored gelatin
GETTING READY:
1. Cut a piece of parchment paper to the size of your pan
2. Proof your yeast by adding the yeast and the sugar to 1/3 cup hot tap water. Stir gently and set aside. This will test to see if your yeast is still active. Yeast should start to foam in a few minutes.
3. To the other 1/3 cup hot tap water, add gelatin and stir to dissolve. Set aside.
4. Preheat oven to 400 ̊ and place in your empty baking sheet or pizza pan to pre-heat.
DIRECTIONS:
1. In a large mixing bowl, stir together brown rice flour, white rice flour, potato starch, salt, garlic powder, baking powder, and xanthan gum.
2. Now add olive oil, yeast mixture, and gelatin mixture. Mix at medium speed until dough is smooth. Dough will be sticky and will not resemble gluten dough. That’s o.k.!
3. To roll out dough: Spray your pre-cut parchment paper with non-stick cooking spray and lay on work surface. Place dough in center, and lay another parchment on top (also sprayed with non-stick spray.)
4. Roll to desired thickness, remove top paper, and finish shaping dough by hand. Create a slightly thicker outer edge on your dough to keep in sauce and toppings.
5. Loosely cover with plastic wrap, and set in warm place for 30-40 minutes. Dough will rise slightly.
6. After 30-40 minutes, remove heated pan from oven.
7. Remove plastic from dough and transfer to pre-heated baking sheet by sliding parchment carefully over to heated pan.
8. Bake for 6-7 minutes. You will bake it again after topping the pizza.
9. Remove from oven, and move pizza crust and parchment off of hot pan to a cutting board to top.
10. Increase oven temperature to 450 ̊. Return empty pan to oven to pre-heat again.
11. Top your pizza with gluten free sauce, cheese, and favorite toppings.
12. Remove pan from oven and carefully slide the topped pizza onto the heated pan without the parchment. (Trust me on this one…it will help to create a slightly crispy crust that is so important to great pizza!)
13. Bake for about 8-9 minutes or until toppings are done and crust is lightly golden.
14. Remove and enjoy!!!

I made some modifications out of necessity and my wife was impressed with the result. For a 16" pizza, 1 cup of white rice flour, 1/2 cup of Red Mill one to one flour, 1.5 cups of Tapioca flour, 1 teas of salt, 2 teas of xanthan gum, 2 teas of garlic powder, whole package of active dry yeast (not instant), 2 teas of baking powder, 2 Tbsp of sugar, 13 oz of hot tap water (108 deg), and 2 Tbsp of olive oil, and no gelatin. The Red Mill flour has xanthan gum and this came out great. I also used a pizza stone but used the exact procedure with the parchment paper that was described in the video.

Really delicious! This crust will be our new go-to. I was really intrigued by the addition of gelatin and I think that was exactly what was missing in all the other recipes I've tried. So far, I've made your pancakes, chocolate cake, and pizza crust and you are 3 for 3! Nice job.

I'm new to GF Cooking and so glad I found GLUTEN FREE HABIT! The pizza turned out Great the first time. The hand mixer did present a problem for me though, but the 2nd pizza dough got mixed in my bread machine and it worked PERFECTLY. Dough looked just like the video! Can't wait to try the Bread recipe. Thank you for sharing your recipes and showing us how to do it. Experience is the best teacher.

I did this one last night, and had amazing results. I used psyllium husk instead of gelatin and let the dough rise for an hour before rolling it out. Turned out amazing.

Hi Wanda...you may want to try my new pizza crust recipe. I think it's even better :) Look for my Pizza Margherita video...although it's very similar, I did make some slight changes that are an improvement. Enjoy!

Can we skip the gelatin of we use psyllium husk instead of xanthan gum? And if so, should we also reduce the water measurement?

I did that. Did equal measurements (1tsp psyllium husk) and didn't reduce the water. The dough turned out much dryer than in the video, but it also made it more manageable. Turned out great.

Can we use arabic gum instead of xanthan, and potato flour instead of starch and flexseed gel instead of gelatin

For best results I would recommend no substitutions at all. I've tried a few different combinations of flours/starches, and the recipe as printed is what gives the best results. Hi Deja Deja! After testing this recipe with many different ingredients, gelatin was really the best at giving the pizza crust that slight chew that it needs. Unfortunately, I don't have a good substitution for it, sorry. Thanks for asking.

Pectin (its come from fruit skins) is the vegan form of gelatin

Hi Sonu. Although I've never tried a substitute for the gelatin, I've read that a 1:1 substitute would be powdered agar agar. I'm not sure if it would give the same effect that gelatin does (a nice chew to the pizza) but it's worth a try if you need a sub. Hope this helps and thanks for asking!

+Adijean Valenzuela Hi Adijean - Gluten free cooking/baking involves some tricky substitutes sometimes :) The gelatin helps to give the pizza crust the slightly chewy texture that gluten pizza has. Don't worry though...you will never know that the pizza crust contains gelatin! It just secretly does the job. Thanks for watching!
