GLUTEN FREE CINNAMON SWIRL POUND CAKE
*please remember when measuring flours to spoon the flour into your measuring cup...don't scoop into the bag or you will be adding too much flour to the recipe*
Dry Ingredients:
1 cup brown rice flour (4.0 oz.)
½ cup tapioca flour (2.0 oz.)
½ cup cornstarch (2.3 oz.)
½ tsp. salt
2 tsp. baking powder
¾ tsp. xanthan gum
1 and 1/3 cup granulated sugar
Wet Ingredients:
2 sticks butter, softened
5 large eggs (room temp.)
3 Tbsp. vegetable oil
2 tsp. vanilla
1/2 cup buttermilk
Filling:
3 Tbsp. granulated sugar
1 Tbsp. plus 1 tsp. cinnamon
Glaze:
2 Tbsp. butter, softened
3/4 cup confectioner’s sugar
½ tsp. vanilla
2 tsp. milk
*adjust the glaze to your liking by thinning it with a tiny bit more milk, or thickening it with a little more confectioner's sugar*
GETTING READY
1. Generously grease and flour (gluten free) a 9x5 loaf pan
2. Set out butter to soften
3. Set out eggs to bring to room temperature
4. Preheat oven to 350 degrees
LET’S GET STARTED
1. Make the cinnamon mix: In small bowl, stir together 3 Tbsp. sugar and 1 Tbsp. plus 1tsp. cinnamon. Set aside.
2. In a medium-sized bowl, mix together your dry ingredients: brown rice flour, tapioca flour, corn starch, salt, baking powder, and xanthan gum. Whisk together well. Set aside.
3. In large mixing bowl, cream together the 2 sticks softened butter and 1 and 1/3 cups granulated sugar. Continue until fluffy and light in color. This usually takes 5 or 6 minutes.
4. To the creamed butter, add eggs, one at a time, mixing in between each addition just until the yolks blend in.
5. Add the flour mix into the butter/egg mix 1/3 at a time. Mix between each addition.
6. Now add in the oil, vanilla, and buttermilk. Mix until fluffy again.
7. Pour 1/3 of batter into pan and smooth with spoon or spatula to level. Sprinkle ½ of cinnamon filling to cover entire surface.
8. Pour 1/3 of batter over the cinnamon topping and use a spoon or spatula to smooth and level. Sprinkle remaining ½ of cinnamon filling to cover entire surface.
9. Pour remaining 1/3 of batter over cinnamon topping. Use a spatula or spoon to smooth and level.
10. Using a butter knife, swirl the cinnamon throughout the batter. Smooth over the top so that no dry cinnamon is exposed. Now wipe off the knife and draw a line lengthwise in the top of the bread...this will encourage it to crack in the right place :)
11. Bake, uncovered, at 350 degrees for 55 minutes, then insert thermometer if you have one.
12. The top of the bread will probably crack open…this is normal for pound cake and shows that you did a great job! This exposed area may appear slightly moist even when the bread is fully baked.
13. Continue to bake for 5-10 minutes more, or until a long pick comes out with only a few moist crumbs (it should not be wet). The internal temperature of the bread should be 195-200 degrees. Total baking time is 60-65 minutes.
14. While bread is baking, prepare icing/glaze: in small bowl: Stir together 2 Tbsp. softened butter, confectioner’s sugar, vanilla, and milk. Stir until completely smooth. Set aside.
15. When the bread is done, remove from oven and place on rack to cool, still in pan.
16. Let cool in pan for 20 minutes before removing. Prior to this time your bread will be too delicate and may crack if removed when hot.
17. After 20 minutes, run a knife carefully around edges to loosen, then carefully invert pan and remove cake. Allow to cool on wire rack before slicing. If sliced when too warm, cake may crumble a little as it will still be delicate.
18. Ice cake while still slightly warm so that some icing will drip down sides. I like to also ice a second time when the cake is a little cooler. (double the yumm!)
19. Tip: If you prefer a crunchy top to your cake, you can save aside some of the cinnamon filling to sprinkle on top before baking, but don’t smooth it over with batter.

Hi Geraldine! Thank you so much for your kind comments. I'm glad your family loved it! It disappears in my house so fast I barely get any :) I haven't tried freezing it yet so I can't say how it would go, but I will say that we always notice that it's still super moist on day 2 (so at least you could bake the day before, don't slice into it, cover it, and serve the next day.) I'll be making this for Christmas too...and probably Thanksgiving as well!

Thank you for your wonderful recipe, and for answering Renie Ashbough. The messy spill over in the oven also happened to me as well. Plus I didn't add the right amount of butter to the recipe. I though two sticks of butter equaled 1/4 cup. And find out it required 1 cup! All in all it somewhat turned out. It taste great, lol. But your Sandwich Bread turned out great. Both my husband and I love it. Thanks for sharing all of your recipes.

Ok I made this for some friends of mine, really love it except one of them said it was just to sweet so next time I will try coconut sugar to see if that helps and it will add some coconut flavor which sounds interesting!! Other from that it’s a winner winner chicken dinner!!

I have made two of these cakes and when I take the cake out of the oven to let it cool it falls , not a super lot, but the beautiful rounded top has sunk. What is happening? The cake is super good!

Sharon Young I just made your recipe for your pound cake. This the best gluten free pound cake I've ever made, it so moist and buttery. I omitted the cinnamon and glaze, because I'm useing it to put strawberries over, like we did in the 50's with pound cake. Also peaches are also good, and whipped cream. This cake is delish!!!!

Hi Princetta! For best results, I recommend the recipe with no substitutions. I haven't tried white rice as a sub for this, so I can't say how it would turn out. I hope it works out great for you!! Best of luck with it.

Hi Heather - I've never tried to freeze this because we gobble it up so fast. I think it would work if you wrap it really well (plastic wrap, then tinfoil over it, or something similar) and then to serve, just microwave a slice for a VERY short time just to warm it. I'd love to know how it goes...let me know if you get time :)

Hi Kinjai. If you are only trying to replace the cornstarch, try subbing in potato starch. I've not tried this yet with the Cinnamon Pound Cake though so you may have to experiment a little. Hope it works out great. Enjoy your pound cake!

Corn Flour is the same as corn starch. I'm from Canada originally and was confused when I first came here and they call it Corn Flour...in North America it's called Corn Starch.

isnt rice flour and cornflour and tapioca all starchy?? pls explain if possible 😊!! and can this be made only wth almond flour

Hi Raymen...yes, tapioca flour (starch) and corn starch are all carbs. Brown rice flour is just a little less so (little bit of fat and protein). The majority of almond flour is fat (with some carbs and protein). I usually use a combination of 3 flours to get the texture/flavor that I'm looking for, and this combo works so well :) You could try subbing in some almond flour but I would recommend combining it with a couple other GF flours/starches. Hope it works out perfectly for you!

2 sticks butter is 1 cup, or 1/2 pound, or about 227 grams.

It's best to use buttermilk if you can...it really helps to make this cake tender and moist. If you don't have buttermilk in your fridge, then you could try a substitute of 1/2 cup regular milk with a couple teaspoons of vinegar added into it. Let this sit for 10 minutes to sour prior to using it. It should work pretty well. Hope this helps!

Hi Patricia - Thanks for your interest in the pound cake! I always recommend using the recipe as printed, whenever possible. Every gluten free flour mix has a different ratio of different flours/starches, so I can't say if your results would be the same. The other concern is that without knowing exactly how much xanthan gum is in the pre-made mix, you won't know how much to add (if any). Even a little bit more or less can make a difference in the results. Whatever you decide to do...I hope it's a delicious success.

I think I would add in some raisins and finely chopped nuts. Just stir them in before pouring into pan. Hope it turns out great!

I would cook and puree banana added into the batter with a nice fine chopped your choice of nuts and make a gluten-free banana nut cake

No, it is not. Starch has all the protein and fats removed leaving just the starch.

I tried this recipe, mine turned out like sponge cake, is it supposed to be not dense as pound cake used to be? Mine also little bit shrink.

Mine comes out nice and dense. It may shrink a tiny bit but it shouldn't shrink much. I'm not sure what might have happened...I hope you still enjoyed it!

Do we always have to mix brown and white rice flour? I can't find any brown rice flour, so can I use something else instead?

Hi Jenny...this recipe does use brown rice, but not white rice. The combination I've listed (brown rice, tapioca, cornstarch) is what I personally think works best for this recipe, but if you can't find brown rice certainly try a sub. Perhaps try sorghum to replace the brown rice (keeping the tapioca and cornstarch the same). As I've never tried sorghum in this recipe I can't guarantee the outcome, but it's the one I would try first as a sub. Hope it's a delicious success!

Please be specific about the butter measurement. Is it 2 full sticks of butter or two 1/2 sticks? 1/2 cup or 1 cup of butter?

I decided to do a trial run of this recipe since it was a request for my sons upcoming birthday. I'm so sad to report it was a complete disaster! I followed everything exactly except I used my Kitchen Aid Mixer. I did notice that the batter seemed a lot more "Fluffy" compared to your batter. When I filled my bread 9 x 5 (double checked my measurement) pan it was very close to the top and it concerned me a bit. Well, it overflowed into my oven made a huge smokey mess. SO SAD! Can you give me any tips??? My son really wants this for his birthday. All my ingredients were new and like I said followed everything exactly. I live in Oregon, so I don't think altitude has anything to do with this failure. :(

Hi Renie...oh no!! Something went crazy. Let's try to troubleshoot this so your son can have this for his birthday! It's super yummy and I don't want him to miss out on it. :) OK...so it sounds like you were very careful to follow the directions. Here are a few thoughts I had off the top of my head: 1) the height of my pan is 3.5 in. Could yours be a tiny bit shorter? That would definitely be a problem which would cause it to overflow. 2) Are you weighing your flours? This is the most accurate method. If you are not, then please be sure not to scoop your measuring cup into the flour bag. This would result in lots of extra flour. (extra flour = too much batter=overflow). Instead, spoon the flour into the measuring cup and then scrape off extra with the back side of a knife. 3) Use size large eggs. Make sure they are not extra-large. (I've made this mistake myself before). With five eggs in the mix, extra- large eggs would be way too much egg. 4) Because you said that your mix was more fluffy, it makes me think that you could possibly be mixing for too long, thus adding too much air into the mix (creating a fluffier batter that would take up more space in your pan, that would possibly overflow.) Don't have your mixer continuously running...only mix as stated in the recipe. I hope these ideas help...let me know how the next cake comes out :)

I think it could be a combo of #1 and #4, my pan is only 3" high and I mixed the length of time you suggested but because I think my mixer is different I'll not go as long and shorten it by a min or two. OH MY! I feel terrible that I forgot to let you know how it turned out!!! Well it was a success! I ended up using a bunt pan and it was perfect! The other pan was not deep enough. My son loved it!

Is it a stand mixer?They beat at a faster rate than a hand mixer.That would incorporate more air into the batter manking a larger volume of batter.

Hi Nataly...one stick of butter is 4 oz., so you'll need 8 oz. for the main recipe. You'll also need 2 more tablespoons for the glaze. Hope you enjoy it!
