INGREDIENTS:
Mushroom - 200 gms
(cleaned, washed, and cut)
For coconut masala paste.
Oil -2 to 3 tbsp
Garlic cloves - 7
Ginger - 1 inch
Onion - 2 medium sizes
Tomato - 1 big size
Grated coconut - 1 cup (½ coconut)
Fresh coriander leaves
Green chilli - 1
Turmeric powder - ½ tsp
Goan garam masala - 1 ½ tsp
Water as required
Final xacuti
Oil - 2 to 3 tbsp
Finely chopped garlic - 2 tsp
Finely chopped ginger - 1 tsp
Fresh coriander leaves
Onion - 2 medium sizes
Tomato - 1 big size
Coconut masala paste
Mushroom
Salt to taste
Water as per requirement
Veg Maggie cube - 1
Freshly chopped coriander leaves
METHOD/PREPARATION
Step 1:
Thoroughly clean, wash, and cut the mushroom and keep aside.
Step 2: for coconut masala paste.
In a kadai, add oil once the oil heats. Add ginger and garlic and saute till the raw smell of ginger and garlic goes away. Add onion and saute till translucent. add tomato and saute till it’s become soft. Now add green chili, freshly grated coconut, and fresh coriander leaves. Roast till the coconut becomes light golden. Switch off the gas and let’s cool down completely. After completely cooling down transfer it into the mixer jar. Add turmeric powder and Goan garam masala. Water as required and grind to a fine paste.
Step 3:
In the same kadai, add oil. Once the oil heats. Add finely chopped ginger and garlic and saute till the raw smell of ginger and garlic goes away. Now add coriander leaves and onion, and saute till translucent. add tomato and saute till it becomes soft. Now add ground masala paste, and water to adjust its consistency. mix well and cook for 10 to 12 minutes. keep stirring in between. now add mushroom and cook for 5 to 6 minutes. add salt to taste and Maggie cubes and mix it well. cook for 2 to 3 minutes mix. Add fresh coriander leaves mix well and serve.
Serve with bread, chapati, or steamed rice as a side dish.
