In this episode, So-Han explores some teas that don't necessarily fit neatly into a category we've already discussed in this season. This non-category of misfit teas includes teas like Ya Bao and Qian Nian Ye Sheng Cha, which are teas made from the Camellia crassicolumna specie of tea plant. Also non-leaf parts of the tea plant, such as tea seeds and tea flowers. There's also tea plants that grow in abnormal ways, such as Pan Long (Coiling Dragon), which grows wrapped around another tree. There are also teas that are processed in unorthodox ways such as Hong Dao Cave Aged White Tea and Master's Green from Guizhou province (shouts to Rui Liu of Grass People Tree for introducing us to the wonderful world of Guizhou teas).
Tea featured int his episode:

"Tea masters don't play by the rules." this is gold. Masters work with what they have and are never limited to what they can or can not do, mastering by corresponding to the surrounding environment, and by approaching it in the simplest ways.

A. I would love a demonstration on how to boil tea seeds B. That Pan Long is the craziest tea I've ever had. It's a bit intense in taste to brew as strongly as I typically make tea, but I think it legitimately got me high.

Can you make a video or an in-depth series on how to make herbal teas according to gong fu My go to teas are Peppermint Ginger Stinging nettle I also make infusions rather than teas and will be making teas for medical reasons Lavender for sleep Marigold for parasites Sage yea for health benefits etc Remember, taste is a factor for nutritional value is the biggest factor I would highly appreciate it. I usually sleep my stuff for 15 to 20 minutes to make an infusion. And I’m thinking better getting a guy on or whatever you call it that you have to help steep looseleaf tea that long without losing temperature

12:39~ I looked up Liu et al.(2009), and one of the flavan-3-ols found in _Yá Bāo_ (芽苞) definitely was EGCg(Epigallocatechin-3-gallate). The others are: EC(Epicatechin) ECg(Epicatechin-3-gallate) GCdg(Gallocatechin-3,5-digallate) Yeah, full of catechins(anxiolytics) in _Yá Bāo_ .

I just found this video and it resonates with me because the unusual teas that defy categories are my favourites (many teas from Nepal I know are like this, I also have a fave Japanese tea that tastes like nothing else in the world). I had my mind blown when you talked about Ya Bao. I love this tea for years, this year I got the purple variety for the first time and it was even better than the one with white leaves I knew before. I heard the old camelia taliensis trees theory, but what you say is new, including the low caffeine thing. Wow. (Also this made me decide I'll be drinking Ya Bao tomorrow). Pan Long is also wow. I would really love to get such a tea at least once in my life. In summary, this only makes me watch out for unusual teas even more!

So-Han, I absolutely love your videos and both the first-hand knowledge that you have, and the experiences you bring to us through years in this career. Could I age normal oolongs and red teas (not rooibos)?
@TeaHouseGhost
@TeaHouseGhost 2 года назад
You can age normal oolongs. Jade oolongs don't age very well. The darker ones will age well with periodic re-roasting over the years. I'd have to ask So-Han to see how often to re-roast.

@@TeaHouseGhost Thank you! I have some dan cong and wuyi that im interested in seeing if it will change in character over time. Im new to this and currently trying out the different types of tea outside of oolongs and the normal red lipton tea i get over the counter. I thought id try aging my oolongs, and maybe aged red teas.

@TeaHouseGhost
@TeaHouseGhost 2 года назад
Depends on the size of the gaiwan and the type of tea. For most teas, in a standard size gaiwan (120mL or so), 5-7g of tea should do it. Might go for all 10g with a Phoenix Oolong sometimes.
