Directions:

I really don't get all the comments bitching about his recipe. Like, he's not even claiming that this is the original classic 1000000% and that this is how the original classic 1000000% should be done. He's just showing how you can twist it in his own way because he is a freaking good chef and knows how to cook delicious things. How boring would that be to just do everything by the book and never change a thing ? I'm not italian, but I know that this is not the original, and that won't stop me from trying it because it really does look amazing.

"Ragù alla Bolognese" is a Italian PAT (Typical food product). So, although it's not a real DOP (product protected by the European law, in GB you call PDO) is however not correct to call with the same name (Bolognese). Because not call.. "ramsay Bolognese" or "my Bolognese" ??? I know that, especially on food, we Italians are too easily offended, but I'm sure it would bother also to you if it happens what happens to us with food. In the world are cooked recipe with Italian name that are not Italian (I don't talk on Ramsay but in "general").. Tons of fake products with Italian names ("italian sounding" It sells well). There is a huge economic damage (in addition to the image damage). PS Sry.. I don't speak english but I hope you understand my concept in any case.

EU geographic laws for food are just protectionist methods used to promote regions. Like how you can't call champagne "champagne" unless it comes from that region (otherwise it's sparkling wine). It's a stupid system built to stop people from using better, cheaper alternatives under the guise of protecting culture.

***** No it's a system built to stop FAKE PRODUCT. Because "you" call your product Champagne or Prosecco?.. Champagne are French Prosecco Italian All others "champagne" and "prosecco" are only FAKE. And countries that do this with traditional and historic products than others countries make it a FRAUD. Around the world I have found hundreds of fake "Italian" products with Italian name and packaged in green, white and red (Italian flag). Why not use your language? Why not use your name or flag? Why do you want to believe that Italian? For MONEY man.. Italian Sounding>easy MONEY. Behind our food there are centuries of history.. call your shit products with your name and in your language. Protect is our right.

I'm Italian and I find comments on here to be funny, the thing is, what you foreigners call ''bolognese'', is called ragù, in Italy. All over my country there are several kinds of ragù and the one called bolognese is from the city of Bologna, northern Italy, and has a specific recipe. You can't call bolognese what Gordon cooked in this video. Secondly a lot of foreigners have a distorted idea of Italian food, you don't know how many times I've read such things as ''Italian food sucks'', written by people who've never been to Italy and just had fake Italian food in their country. This is why we Italians don't accept our food to be altered...

I would like to personally thank everyone in Gordon Ramsay videos' comment sections. There have been dark times in my life, but nothing has helped me more than a snide comment about how his face is more wrinkily than his baked potato skins or that his cameraman must have made him drink too much water just before they started filming. No other youtube videos have so many well thought out clever comments in them. Three cheers!

I like how people are criticizing his technique when in fact there is milk in the originial bolognese recipe, look it up. If your grandmother didn't do it that way, doesn't mean nobody in Italy didn't.

@@damaran834 it's not worchestershire sauce. It's "oyster sauce" it's a good alternative to anchovies. Which are used in many traditional bolognese recipies.

@@filipporubino4163Mine requires 4 hours of simmering but I have more liquid in mine. Pancetta, veal, beef, pork, sofrito, tomatoes, beef stock, white wine, milk. Makes your kitchen smell heavenly for the entire afternoon. Serve with tagliatelle, parmensan or romano cheese and fresh parsley.

It must be nice to have the time it takes (4-5 hours) to make yummy food like a traditional Bolognese... Until then I'll give this 1 a shot. Gordon knows his stuff so it's a good bet it's tasty.

I love the comments about authenticity. LMAO. My family was originally from Bologna and my Nonna and the old Aunts couldn't even reach a consensus on the best way to make it. I very much doubt the rest of the world will figure it out in this century. Most of these folks were farmers so they would have used what was readily available and that changed frequently. I've had excellent versions made from Venison and Boar.

I've always thought that a traditional bolognese didn't have tomato, but a touch of cream. We're in Bologna, not Naples. (and pancetta is a great addition, and very native to the region).

Ho letto molti dei commenti di italiani e non, rimasti in patria e non, e penso che da italiano quale sono una cosa posso dirla: Noi italiani siamo famosi in tutto il mondo per la nostra cucina, famosi e rispettati aggiungerei. Ognuno di noi ha una nonna con la quale almeno una volta l'anno a dovuto fare i conti... Al cenone di natale non si scappa! E chi più per un piatto, chi più per un'altro, in funzione di dove si vive, ne abbiamo assaggiate svariate di prelibatezze.... Ora non per nulla togliere al nostro caro Chef Pluri premiato ecc ecc. Ma, c'è da fare una costatazione. Da italiano non mi sono mai messo a fare video su come preparare un fantastico thè delle 5 o un loro piatto e o qualsiasi altra cosa che possano avere. Io credo che quello che a molti di noi fa storcere il naso, e' questo "Bolognese Sauce". Salsa, sugo, ragu' sono tutti sinonimi per dire la stessa cosa, ossia condimento, e di "Bolognese" ce n'è uno solo! Quindi, Non so voi ma credo che il modo migliore per risolvere questa diatriba sia semplicemente quello di dover far cambiare nome alla ricetta del nostro caro chef !

Noi siamo italiani e, in questo periodo di schifo, l'unica cosa che ci rimane è l'identità gastronomica. Noi, nel complesso, mangiamo infinitamente meglio di quasi tutto il mondo e ci sta un po' sul culo che si chiamino le nostre cose con il loro nome, figurati quanto ci piace vedere un ragù bolognese con latte, origano e worchester. Noi l'hamburger lo possiamo migliorare, con i nostri prodotti tipici e le nostre carni piemontesi. Loro dove toccano, aggiungono grassi e note a cazzo, tipo la worchester. Per questo noi siamo rispettati e loro sono famosi per il junk food.

if they are finally grated you'll never taste them anyway, just cosmetic like 50% of building food. Some ingredients work, some kill the others so why use? It's a science and the better you are at science, or at bush survival, the better the cooker will be.

In a bolognese many people start by sweating down one onion, one carrot and a celery stick, all finely chopped with 100g of pancetta then adding the beef/pork mix of meat, wine and tomatoes👍

I was watching other videos. Some people put in a whole peeled carrot while they cook their sauce. Then take it out after the sauce is done cooking. It’s suppose to help reduce the acidity that the tomato naturally has.

@@LilHi2 that's not why us Italians use carrots in bolognese. We use our sofrito to give it a sweet taste. Cooking it for 2-3 hours like it's supposed to be cooked takes away that acidity

If you are really passionate about cooking you are not wasting 3 hours! the real ragu bolognese it is taking that much to cook, but once it is done you see the difference... the slow cooking is blending all the ingredients together bringing a very rich taste in every bite you take... it's worth it..

Being aware that the home made version is way better you can still enjoy a burger from McDonald's or Burger King .. no need to be so strict about recipes. If you don't have much time this version Gordon showed here is a nice and quick alternative to the 2-3hrs slow cooked bolognese.

Salvatore Pannozzo I think even Gordon Ramsay would agree. He has a great deal of respect for "veteran cooks". He has absolutely no issue admitting that he has little to zero knowledge about certain food, compared to others. His great escape videos are a great example of that :)

Salvatore Pannozzo Well to be honest, I always had the assumption that food can be made in more than 1 way, just like beer isn't just 1 flavor. Gordon is a really experienced and acknowledged chef, so it's hard to believe he would make this sauce without knowing what he is doing. I don't blame people for being sceptical about it though, traditional food is usually the best, but I would say it's never the only way.

Totally agree with you. There is no place for worcester sauce in ragu bolognese. And I also think it´s not so hard to chop carrots and celery and onion instead of grate them, because it looses the right texture.

in italy we dont call this sauce bolognese but Ragù!! we dont use worchester souce, but nutmeg grated for more flavour, not use oregano but someone use parsley and he has forgot to add the celery with onion and carrot, the meat we generally use is a mix between beeff and pork after the pot have to boil for an hour before use the sauce for pasta, lasagne, cannelloni, supplì, etc. I'm an italian cook ;)

Xinsane87X Nutmeg? That's an interesting concept, I could see that working. Thanks for the tip, I'll try that out. Parsley is good, but it has to be fresh, best when you have is growing in the garden. The advantage of oregano is, that you can use the dried / frozen variation in quick home-cooking, while dried parsley would just be a waste. I personally also like to mix flakes of crumbled piri-piri peppers with the meat to make the sauce spicy. Another interesting variation: I like to use buffalo meat instead of beef: a bit fattier, a bit heavier but it works out nice. But it's interesting how those recipes change when they wander through the cultures - in Germany, during the 60's and 70's, people used to add sour-cream to the tomato-stock to give it a more pink-look. I could imagine an italian cook jumping out the window at that thought :)

Xinsane87X Yeah, I do the "trilogy" of celery, onion, and carrot after watching Julia Child cook one up on PBS. I add a bit of brown sugar at the end before simmering, which makes it taste really good (I don't add Worchestershire).

Jim Pimmers One in the same, actually. Depends where you're from and where you're cooking. Celery and onion are the two which carry over from place to place, I prefer peppers in pasta dishes and carrot on a meat dish.

The way he cooks his pasta is different in almost every video. This is a quick and easy way... If you want there are some videos on how to make your own pasta, which takes up about 1 hour if you want to cook for 3 to 4 people...

WORSTER perfectly compliments tomato-based sauces. If you've never tried it, but still disdain it because you aren't used to it, maybe you should rethink your limited stance on food? Or don't, whatever. I will sleep at night either way. And yes. I have seen how he cooks pasta. I have seen a lot of his cooking. Almost all of his recipes involve a (mostly) original take on a classic. Every time that I try one of his dishes out I end up genuinely and pleasantly surprised, with one more door open in my mind towards cooking that I likely didn't even think of previously. I am no chef, nor did I ever claim to be, but I acknowledge the level of skill, dedication to the art, and knowledge that is required for every single star that he has earned. Point being, that maybe he knows more about this, even outside of his preferred cooking of French and traditional English foods, than these nay-sayers. Maybe.

This looks like a tasty quick meat sauce, however, in no way is it Bolognese or even close. A Bolognese cooked like the Italian mama's do it is almost magical with all kinds of nuances and depths of flavor that this quick sauce will not approach.

4-5 hours is correct, but you’re wrong about there being no onion. A true bolognese has both celery, onion, and carrots also there’s no Worcestershire sauce in bolognese. No idea why Gordon added it in there

Guys, Gordon is good and smart, but the Bolognese sauce is not made this way. To make it, take the onion, the carrot, and the garlic, as he does, then you have to add the meat, which should be pork, sausage, and maybe a bit of ham, cut is small pieces. The true difference with the recipe in this video, ( over the milk and the worcester sauce (???), which are not even thought in Bologna), is that, after you add wine, and let it reduce, you must add more tomatoes and if is necessary a bit of water and let it sub-boils with low flame for 2/3 hours. The ragù is better if it sub-boils a lot.

Why do people cry about "this not being authentic"? Bolognese is a concept, not a rule set in stone. It has wandered around the world many times, and people cook it slightly different everywhere. It's like with any other food: don't expect sushi from Japan to taste the same way in the States or Europe. That would be boring anyway. Cooking is an art - stagnation kills the art, variation and new approaches keep it alive.

***** You are right, but then again say it is a variation of Bolognese sauce. It is more similar to how they do that in Northern Europe, but it is a variation. In the same way you can do a variation of Amatriciana sauce with bacon instead of cheek lard, and it tastes fine, but it is not Amatriciana.
