This worked for me. Simple salt and pepper seasoning, seared each side on high for 30 seconds, then the sides for another 30, lower to medium heat and add butter and garlic powder and cook every side for one minute before flipping. All while making sure you keep pouring the butter and garlic powder over the steak as it cooks with a spoon. About 6 flips makes a good medium rare steak. 8-10 makes well done. So fast and easy, making this for my girl on Valentines day!

I've used this video for my basic source and loved it, it was the most beautiful steak I've made to date. Now I've heard some say you want to use vegetable oil for high heat and not olive oil, but Mr. Ramsay clearly put emphasis on the olive oil that he used. also how did he keep the color of the butter such a magnificent yellow and not burn it?

i used to use an app that told you exactly when to turn it etc. once i learnt the basic timing i can now cook it perfect everytime. key steps are the high heat smoking pan in the beginning. sear each side 30secs. then turn evry minute with flame turned down to med-medhigh. give it a good 5 mins if its around 2.5cm thick. *then wrap steak in foil and rest for a solid 8mins. nice n pink inside with meat juices dripping.

+sam luker Not if you buy your meat at a supermarket or most butcher shops. There are two processes you have to look out for that they do not label and one of them is done at 90% of all processing places. One is the use of "meat glue" though if you look close you can sometimes tell that the other you would never know if they didn't tell you they did it and that is mechanical tenderizing. Both of these processes take the bacteria that is "only on the outer lay of the meat and killed off by a good searing so you can leave the middle rare" and bring it right into the steak or roast itself. Meaning if you have any meat where one of both of these could have been used on it you need to cook it to 71° C or 160° F with a proper resting period to ensure the death of food born pathogens all the way through. There are currently no laws requiring them to label either of these so you have no way of knowing. They are requiring the mechanical tenderizing be labeled in the US but that isn't until May 2016.
@skillcoiler

I agree with all the above comments. There's no way a semi competent cook ends up putting out a product expected of a classically trained chef during the course of a competition. I met a Hell's Kitchen winner in Las Vegas a few years ago. She wasn't really the "Executive Chef" of the restaurant, but mostly a figurehead that was greeting people at the door. We learned that quite often their employment with the restaurant rarely lasts more than a year. It's all scripted.

You often heavily season the steak because most of the time, when your pan is scorching hot, a lot of the seasoning actually gets stuck on the pan so you end up with half the seasoning you originally put on :)

@seikibrian8641
@seikibrian8641 9 лет назад
+schlaznger If you're cooking it on a grill, turning it only once (or at most twice) gives nice grill marks. If you're cooking it in a pan, grill marks aren't present, so you can turn it as often as you want. Turning it more often transmits the heat more slowly through the depth of the meat, making it easier to get the center cooked to the desired level without overcooking the outside.
