Ingredients for Gozleme (6 Pieces):
300 gr of All-purpose Flour (2 1/2 Cups).
27 gr of Oil (2 Tbsp).
1/2 tsp of Salt.
1/2 tsp vinegar.
140 to 150 ml of Warm Water (I need 145 ml, If necessary add a little more or less, depending on how much your flour absorbs).
Filling:
200 gr of Feta Cheese.
30 gr of chopped baby spinach.
20 gr of Fresh Chives (You can substitute with parsley or coriander).
Gouda or Low moisture mozzarella cheese or to taste, I use about 100 to 150 gr.
Tips and Recommendations:
1. After kneading, your dough should not be so wet or dry, remember that the amount of liquids will vary a little depending on the flour you use, the one I use is T400 with 9.8 grams of protein, is considered all-purpose flour. Add water little by little to not overdo and if dough is dry add a little more water.
2. The cooking time of the gozleme may vary a bit, it can takes about 2 minutes per side at medium to medium low temperature. plus the time that you cook the edges, do not cook them at high temperature because we want it to cook them well inside, the dough is very thin and will cook quickly but I recommend that you cook at medium to medium low temperature and turn over once they are golden brown, you can also cover your pan with the lid to cook it faster inside, also you can review the first one you make by trying it to ensure that the time you cooked it was good, if not, just lower the temperature and cook for a longer time covered with the lid.
3. You can also fill them with prepared ground beef, potatoes, etc.
