Grand Marnier Ganache
200g Heavy Cream
70-100g Grand Marnier (depending on how strong you want the flavor)
250g 64% Chocolate
40g 38% Chocolate
20g Honey
1g Salt
42g Butter
Heat the cream and Grand Marnier to a scald (or heat the cream and mix in the Grand Marnier after if you want to retain the alcohol content). Pour the mixture over the chocolates, honey and salt. After a couple of minutes, mix thoroughly with a whisk or use an immersion blender until everything is combined. Next mix in the butter until it is completely combined as well. Pour the ganache onto a baking sheet lined with plastic wrap and cover again with more plastic wrap. Once it is completely cool it is ready to use either inside the cocoa bombs or as the filling for macarons!
*I prefer using grams as a measurement. If you don't use grams or don't have a scale at home--please stop complaining. There are dozens of online measurement calculators you can input my measurements into and find whatever form of measurement you desire, be it cups or ounces.*
Cocoa Bombs
Heat the chocolate slowly in the microwave or over a double boiler until it is melted and pour it into your hemisphere molds. Smooth the chocolate up the sides and dump out any excess chocolate before scraping the top to create smooth edges.
*If you want to create my gold streaked shell, before you add the chocolate to the mold, use your finger or a brush to brush the inside of the shell with edible gold dust*
Once the chocolate is firm, remove them from the mold.
Clean up the edges by melting them against something warm, and fill them with the ganache and marshmallows before closing the two halves. Decorate with extra chocolate, sprinkles or anything else you might like!
**I also added fresh orange zest inside to enhance the orange flavor and add some brightness into the cocoa!
To serve, pour scalding milk (or milk alternative) over the cocoa bomb in a cup and stir well. Enjoy!
