You know I love my Omi's marble cake and I made countless versions of this cake because it is and will remain my favourite cake. I know those are big words for a baker but this is the best cake and I can have it on any occasion. I couldn't believe how moist this steamed version is and the aromas are wonderful. You could make a chocolate ganache for the top or just a dusting of icing sugar to serve it. Traditionally, we always have a dollop of cream on the side.

R E C I P E
120g unsalted butter, cubed + extra for greasing
110g caster sugar1⁄2 tsp vanilla extract
1 Tbsp dark rum1 pinch salt2 large eggs
150g plain flour2 tsp baking powder20g whole milk15g cocoa powdericing sugar or chocolate ganache,
for decorationwhipped cream, for serving
Method
Grease a loaf tin (no bigger than 20cm x 7cm) with butter and set aside. Alternatively, grease a round 18cm cake tin with butter or line with a round Teflon cake liner.
Place the butter in the mixing bowl. Cream 20 Sec. / Speed 5.
Add the caster sugar, vanilla extract, rum, salt, eggs, plain flour and baking powder. Mix 20 Sec. / Speed 5. Scrape down and mix again 10 Sec. / Speed 4. Pour half of the mixture into the loaf tin and keep the rest in the mixing bowl.
Add the remaining 20g milk and cocoa powder then mix 5Sec. / Speed4. Pour that mixture over the white one and use a fork to make a few swirling motions to create a marble pattern. Wrap the loaf tin or round cake tin with cling film and place in the Varoma dish ensuring some holes are left uncovered to allow the steam to circulate (if they are all covered, you can put some screwed up balls of kitchen foil or a small ramekin under the basin).
Place 1250g water in the mixing bowl and place the Varoma into position. Cook 60 Min. / Varoma / Speed 2. Remove and set aside to cool. Top with chocolate ganache or icing sugar and serve with a big dollop of whipped cream.
