Great video, but when it comes down to a proper team for pulling the old chuck wagon, why not use Belgian Drafts, or possibly Percherons? Even a team of Shires, Suffolk Punches, and maybe Clydesdales would suffice? Perhaps the Italian Heavy Draft as well as the Dutch Draft, and especially the Ardennes? Any of those aforementioned breeds are far better than a team of oxen, regardless of the circumstances. As to the kind of a cow pony that I would like to use, I think that maybe the Chincoteague Pony would be nice, especially if a bitless bridle is used as well as a nice Charro saddle.
