These kataifi rolls are a delicious Greek dessert made with roughly chopped aromatic almonds that are scented with cinnamon, cloves and rose water, wrapped with crispy buttery kataifi shredded phyllo pastry dough and drenched with a sweet, sticky cinnamon, clove, rose syrup.

Hi! I haven't made it like that before but I'm sure it will work. Make sure you baste your baking paper in your pan with butter and baste your kataifi pastry well before you add your nuts and baste your top layer of kataifi pastry well with butter too so it gets a nice nutty flavour when it is cooking. @@alexrebellionbrigade2257 Im so happy you find my recipes easy to follow thats what Im trying to show, how easy and simple it is to create delicious food 😉 I was thinking you should maybe use a thicker layer of kataifi pastry for your base and top than I did woth my rolls. If you are just laying it across make it so it is around 1cm thick so you get the same thickness as the rolls because if its too thin your pastry will end up either burning or being too hard. ggmix !! Hey , so glad you mentioned that !! Coz it’s an easy mistake for me to make the layers thin 😂 !! If I make the layers at the thinness you mentioned, what do I have to loo out for to make sure it will be moist !? The guest at this dinner are from your neck of the wood !! So the plan is to impress them !! Hope it will work 😆 if not !? I’ll direct them to your Chanel 😜

@@alexrebellionbrigade2257 To get the same texture as mine you need to have the same thickness of kataifi pastry all the way around your nuts. As you are only going to have pastry on the top and bottom you will be missing the sides which may change the texture when you bite it. The outside is crisp and the middle more moist. Adding lots of butter will add moistness and also 1cm or even 1.5cm of pastry should help. You may find it hard to serve your katifi. When you have the rolls you just pick it up but you may need to score your top layer down to your nuts before cooking to give you a guide and make cutting easier later. If you watch my galaktoboureko video you can see what I mean when I score my phyllo pastry before cooking. Also as you have no pastry on your sides be very careful when you lift each slice when serving so your nuts don't fall out. Is there any particular reason why you don't want to make the rolls? How many days does it keep and can I freeze it?

Hi to be honest with you I have never had any left over for more than 3 days but I wouldn't eat it past 4 or 5 days and I would store them in the fridge. I have never frozen them before but I have used frozen kataifi so I am assuming that when your kataifi defrosts it will end up being soggy so you will need to reheat them in the oven and maybe add a new syrup on top before you serve it.
