I just got back from Crete and the food was so so so good. Can’t wait to make these even though it sounds like it’s from northern Greece

Thanks George for the recipe and the important history lesson. How come no egg to bind the meat? Does cooling or the olive oil take the place of the egg?

Us Greeks never use gloves to cook. We just wash our hands first. I have never seen anyone wear gloves while cooking in their home, but you be you!
