Aki, congratulations,you are the only Greek cook who makes meals like my Grandmother and my Mother used to make.Greek Cousine is very underrated It is a combination of East and West. Your fasolada was excelent and your revithia perfect.Keep the good work.

This Fasolada exist in Hungary and Transylvania but we make it with smoked pork or sausages.We serve with cream and a salad made of fine sliced onions with a little bit of vinegar and sun-flower oil(could be Extra Virgin Greek Olive Oil ,too!!!!!ha-ha!!!!)And of course bread.And there is the outside cooked version wich we call Bab-gulyas.

What I like about us the meditaranean people. The real med people ....we can not live without olive oil ..other oils just garbage ...my father s aunt died at 90 years old...her chicks always were pink like a baby ...olive oil and real honey in the morning and ofcouurse full of sea food the real not imported from asian country ...am Tunisian and I like all med people ....only med cuisine i can call cuisine the rest is a joke...follow the olive oil ...

@@beatapailicchi3333 nie prawda. Both North African and Polish food cultures have their own taste. U cannot compare them. But looking at the food nutrients, health etc.. mediterran food is healthier and less greasy. Papa 🇵🇱🇹🇳

I believe we can name it after assimilation, wouldnt say algerians took it from greek. Maybe it was vise versa? The only truth we have now is that every neighbouring countries in the world, have a lot of common dishes, with their own little variations. Even the same dish can have further small variation depending on the region of the country🙂

to avoid flatulence... h hi hi :).... after soaking the beans I boil them for 15 minutes then I strain them, throw away the water and put them boiling again on the stove in already boiling water. I do this 2 or 3 times. And I add a big teaspoon of cumin seeds, that helps the digestion and greatly reduces flatulence. For taste I ad one bay leaf and a little thyme. In Romania we serve it with sliced red onions dipped in vinegar or lemon juice and hard polenta (instead of bread). My grandmother used to put thin strips of crispy bacon, but I'm a vegetarian, so... :)

You can also skim the foam they produce during the first boils until it produces minimal to almost no foam, helps with flatulence as well.

If I was permanently stuck on a desert island and given just one choice of food it will be Greek. Greek food is more than doner kebabs and feta. Greek food is among the most varied, healthy and tasty with countless dishes many perfect for vegetarians and even vegans. Provides all the nutrients you need (protein, vitamins, minerals, fibre), is wholesome and very moorish. When it comes to extra virgin olive oil there is but one...Greek.

I made this today in the morning before it got hot. Such a simple, fool-proof recipe! It tastes so light and summery! I accidentally put thyme into it but it didn't hurt at all. The extra olive oil on top before serving really makes for a delicious difference! Thanks Akis!

I have been making fasolada for years now -very similar to your recipe, however, I always first boil the beans for couple of minutes, then throw away that water, wash them and put fresh water for final cooking, together with all other veggies.

Nice recipe. Italian version is similar. We add some small pasta in the final stages of cooking. It gives a little lightness to the dish. It also goes further and is more appealing to younger children. There is no need to add salt when soaking beans as the salt actually toughens the outer husk of the bean. Bravo. :)

Roz Sa Fasolia is a word call for all kinds of beans ( Fasolia) but Yabsa is specifically dry fasolia !!

@@Tasty-Dishes Fasolia is specifically white beans that are cooked in a tomato stew in Iraq. The stew contains meat pieces. It is then served with rice. Personally, i've never heard of yabsa. We have other beans such as pakla which is basically a fava bean that are cooked differently and some areas, they're eaten for breakfast with bread etc. We also eat a lot of other legumes like lentils and chickpeas. I've never heard of lentil soup in Iraq being referred to as 'fasolia'. Where in Iraq do people refer to this particular type of stew as yabsa?

I have so many white beans.......I need awesome recipes like this!! In America all we make is Navy bean soup, ham and bean soup, and BBQ beans with the white beans. I know there is more to white beans than that!!! This looks wonderful!!

In Spain we also cook white beans a lot..my mother used to prepare a hearty soup with garlic, potatoes and cauliflower and bay leaf.. in the north they use a bigger variety to make “fabada” which is very popular dish but quite caloric as it has chorizo, black pudding, and more..

probably the apple (first time I see on fasolada meal) has the function to breakdown the lectin from the beans through the sugar and hydrocarbons to prevent digestive reactions

For those who would prefer their soup thicker and more... gooey (as I do), you can remove a portion of the beans from the soup, mash it and put it back in. Also, it is customary in many parts of Greece to escort white bean soup with smoked herring (instead of anchovies).

In Turkey, "white beans = fasulye" and this dish is best served with a rice pilaf.

@Junubia @Ozan Görgülü History lesson time: The reason it sounds so similar in almost every country is because of the name "phaselus" and/or "phaseolus " which was coined by Roman authors when beans were first introduced from South America (New World) to the Mediterranean in the 14th century A.D although the name has been reclassified in modern times. The plant was instantly popular and grown in Italy, Greece, Turkey, Syria, Lebanon, Spain and other Mediterranean countries. In terms of Etymology the common word used was Fasolia (beans) that is still being used by Greeks, Syrians and Lebanese, other Asian/African countries use Fasooleeya (a variant of the word Fasolia), Turkey uses the less common term Fasulye. .

mackjeez . I am afraid that you are wrong myfriend. Historic sources tell us that ancient Greeks used to eat fasolia since (at least) 5th BC, that is long before Romans come to the scene. There is a lot of historic written evidence for that. For example, if you read Aristophanes famous comedy 'Eirini' ('Peace' in english) , the ancient script, in line 1144 the word fasolia is mentioned when a husband tells his wife what to cook for his guests. Actually, legumes like beans, chickpeas, peas, broad beans, lentiles were part of the daily diet of ancient Greeks. They loved it. On the contrary, Pythagoras (6th century BC) the famus mathematician and philosofer, had banned beans from eating to his students. Some say it was because of the anwanted side effects in meditation when eating them (lol) but others give a more philosophical explanation. Please do search for ancient greek cusine if you want more historic sources.

Thank you. This soup is going to taste soooooo good. I have been looking for various bean soups and this is the one and I knew it when you added olive oil and chili pepper flakes. This Tuesday, yes I will make it then. As for the fresh bread, feta, olives I just happen to work in a market ... life is good and tasty if done right.
