Ingredients:
For the green curry paste:
20 green chili peppers (40g)
100g onion
40g lemon grass
20g coriander
10g ginger
8 cloves of garlic (40g)
1 tsp coriander seeds
1 tsp cumin seeds
5 - 6 kaffir lime leaves
2 tsp salt
2 cans of coconut milk (800ml)
400ml water
2 tbsp palm sugar
4 tbsp soy sauce
200g egg plant
100g green beans
100g shimeji mushroom
300g deep fried tofu
some basil leaves
Instructions:
1. blend all the ingredients for the green curry paste with a blender until smooth.
2. pour a can of coconut milk into a pan or a pot. add green curry paste as well.
3. bring to a boil on medium heat.
4. add all the rest of the ingredients except for tofu and basil leaves. keep simmering until all the vegetables are cooked.
5. add deep fried tofu and basil.
6. Enjoy!

グリーンカレーペースト
青唐辛子 20本(種取ったあと40g)
コリアンダーシード 小さじ1
クミンシード 小さじ1
ニンニク 8つ(40g)
生姜 10g
玉ねぎ 100g
塩 小さじ2
パクチー根付き 20g
こぶみかんの葉 5〜6枚
レモングラス 40g
ココナッツミルク 2缶(800ml)
水 400ml
パームシュガー 大さじ2
醤油 大さじ4
なす 200g
いんげん 100g
ぶなしめじ 100g
厚揚げ 300g
バジルの葉 適量
「作り方」
1、グリーンカレーペーストの全ての材料を、ミルサーやブレンダーなどで滑らかになるまで混ぜます。
2、ココナッツミルク1缶とグリーンカレーペーストを鍋に入れます。
3、中火で沸騰させて、そのまま数分間煮ます。
4、厚揚げとバジル以外の全ての材料を加え、野菜に火が通るまで弱火で煮ます。
5、厚揚げとバジルを加えます。
6、エンジョーイ!

At 3:32 I was annoyed that the jar was out of focus, but when he removed the lid the coriander seeds could be seen beautifully in focus. That is art.

The only things unhealthy in this recipe are the added sugar, salt, and the shit ton of coconut milk that was added. Wouldn't say this recipe as a whole is incredibly unhealthy (lots of whole foods and spices and a lack of animal products), but the saturated fat from all that coconut milk, the salt and the sugar definitely prevent this from being worthy of being called a healthy meal. Probably tasty as hell though. Would not think twice about indulging in that deliciousness.

It doesn't contain worrying quantities of harmful substances (carcinogens, for instance) and it's nutritious, therefore it is healthy. If this dish were the only element in a person's diet, or if someone consumed ungodly amounts of it, then you might have a leg to stand on, but this nutritious, balanced meal is just one meal among many. Salt is not detrimental to our health; sugar isn't; fat isn't. It's all great as long as the daily intake doesn't consistently cross certain boundaries. An apple isn't healthier than chocolate. A diet heavy on apples might be healthier than a diet heavy on chocolate. If any meal can be labeled heathy, then this one can too. A normal diet is a varied diet and a good diet is one that, more often than not, leaves us satisfied, not bloated and depressed after eating. Sorry to get all pedantic, but it drives me crazy when people pretend that their rabbit food makes them healthier than someone who eats a regular balanced diet.

It is remarkably easy to learn how to keep knives razor sharp A quality Japanese honing block can be less than $20, if you look. I used to work in a restaurant where the Chef used the unglazed bottom of porcelain plates, & did it that way for decades, until I ended up with a cheap plate that had an unnoticed lump in the base & took a massive knick out of a quality blade. Had to have it sent to rehab & I went out & got a proper block while it was away for regrindng ...

It was a lovely dish. In my part of the country dishes made with coconut milk is so often eaten. I would suggest two changes. If veggies are cooked in closed pans the flavour is not lost. Coconut milk upon heating separates and oil comes out. If the taste of coconut milk is to be preserved it is better to add it just before putting out the fire. So my suggestion would be cooking the entire dish with diluted coconut milk and adding the second can after cooking all vegetables, simmering for a minute or two and garnishing with basil leaves. By the way, you cook really peacefully.Thank you.

Lekshmy Ram The way I see it is that if the pot is uncovered, some moisture evaporates which serves to intensify the flavor. As well, flavor is not lost because the ingredients impart their flavors to the cooking fluids.

m. taylor You share a valid point. But Water soluble vitamins are lost in open cooking. Also cooking takes longer. The natural flavour of these vegetables is not so intense. With moisture the natural oils are also vaporised. That is why the steam of dishes have an aroma of ingredients. So open cooking serves to diminish the flavour.

Lekshmy Ram Imo, I don't think the simmering temperature would reach the smoking point of the coconut oil to vaporize it. Whether covered or not, heating any foods may denature the ingredients or some vitamins, and flavor would only change significantly if the food gets burnt...but here he does not heat it for long. Also, most store bought coconut milk has already undergone heating by pasteurization. As for separation of the milk, I think you are referring to flocculation. From my past experience with rendering fat only the water evaporates & the aroma is preserved.

m. taylor Thank you for the information. May be you are right. I use fresh coconut milk only. Therefore I don't know about pasteurization of the same. Fresh coconut milk tastes best in curries if it is just warmed. And also, it may be just my taste conditioning!!

What step of the ones shown above you cannot achieve to do yourself?? And if you repeat this and other recipes several times, you slowly begin to make them your own way and thus really start cooking. You will eventually reach this level. Just keep on trying.

I love chia/rice milk! Sometimes, if you're lucky, you can buy it pre-mixed, but you can also mix it yourself :)

Soy milk is great. As long as it's organic and you only drink one or two glasses of it a day it can aid in the prevention of breast cancer, contrary to popular belief raise testosterone slightly, and improve your LDL cholesterol. Go ahead! Nothing but good stuff. Any plant milk will be healthier than animal milk though. (If some people are skeptical, I will gladly provide direct links to scientific literature as a basis for my claims.) Also, if you are interested I am happy to share some vegan tips and tricks and easy, quick, and healthy recipes with you if you want. I love helping people make the switch to veganism. It may seem a bit overbearing at first, but with some support you'll see it's much easier than it might seem. Your body and the animals will thank you! :D

You can re-grow the lemongrass if you cut it about 1-2 inches from the bottom, then put it in water until the roots grow. Then plant them. Sometimes I peel it back a little until I see the root bumps to see if there is a good chance to re-grow them.

You didn't specify what the three things were you put in the wok: Tofu and eggplant of course, but what kind of mushrooms. Here in Finland we have different kinds of mushrooms, so it's nice to know what those were. I still remember when you were cooking in your old apartment and now I notice 1000000 subs, you deserve it
