2 Pork Tenderloins

BBQ Sauce
**HOW TO MAKE THIS RECIPE**
Grilled Pork Tenderloin Recipe Step #1
First you will begin prepping your pork tenderloin by trimming off any unwanted silver skin. Once this is done, give it a rinse under cold water and dry with paper towel. Once this is done take your BBQ rub and begin to place a medium layer of rub onto both sides of your tenderloin. When this is done, place some plastic wrap over top and put it in the fridge for 2 hours to allow the rub to marinate the meat a bit.

After 2 hours remove the tenderloin from the fridge and allow it to rest for 20 minutes to remove the chill from the fridge. While this is happening you can get your grill set up for indirect cooking between 250-275.
Grilled Pork Tenderloin Recipe Step #3
Once your grill is up to tempreture place your tenderloin on the grill opposite the coals and begin to cook for 30 minute. It is at this point were you will also add in your hardwood to begin smoking as well.
Grilled Pork Tenderloin Recipe Step #4
After 20 minutes you are going to flip your tenderloin and place some bbq sauce on top. After this has been done close the lid and continue cooking for another 10 minute or until the internal tempreture reaches 140 degrees. Once you Pork Tenderloin has reached 140 you are going to sauce the other side and then remove if from the grill to rest for 5 minutes.

After 5 minutes of resting time your pork tenderloin is now done and ready to slice up and serve.

Very nice presentation, Jamie. I like to smoke tenderloins with apple wood, which gives off a sweet aroma. You can't go wrong with hickory, though. Nice Job!!

Which is your preferred smoking wood for these pork tenderloins? They look great.

I would stick to more of a fruit wood. We used Applewood (it's what we had for fruit woods) on these tenderloins because it is a milder flavour. You get the milder smokey flavour without overpowering the pork. Does that help? Also any recipe ideas that you can think of let me know.

How do you get the center cooked thoroughly? Every time I try it is semi-raw at the thickest part.

I'm no pro but a thermometer helps me make sure it's cooked all the way. That goes for any meat. Just google the internal temps for different meats and cook it till you get it there. Helps to also not overcook as well.

When you choose your tenderloin, make sure the thickness of the meat (lol) is consistent throughout the loin. Just squeeze it end to end to check

Some people think that pink pork is bad but as long as it’s at 143-145 at both ends for internal temp you’re fine.

You can always just cut it and braid, helps with the cooking process and makes it cook evenly

I usually let these guys rest only about 5-7 minutes under a bit of tented foil as they are not very large.

OMG, please never stab a piece of meat prior or during the cooking process. Only use your hands to tongs. By using a fork you are creating holes for the natural juices to escape during the cook potentially making your meat dry. Never, never, never use a fork!

Meathead over at Amazingribs.com does a great job talking about this myth. Unless you treat it like a pin cushion there is so little moisture loss you won't notice a difference. That said, tongs are better 100% but a few surface pricks with a fork won't do any damage. Cheers.

I spent well over 30 years in the fresh meat business and have been grilling and bbqing for nearly 40 years and I respectfully disagree. I would never use a fork or anything else tp Pearce any meat other than maybe cubed steak or stew meat. There is no doubt in my mind it damages any of your better cuts of meat.
