Grilled porterhouse steaks on the OKJ Highland, reverse seared.
Get the grill setup for indirect cooking (coals on one side, nothin' on the other)
Get some wood chunks on the coals, throw your meat on the opposite side of the grill.
Smoke for awhile.
Take the steaks and put them directly over the hot coals.
Sear, flipping occasionally until done to your liking.
Let rest
Cut and serve.
This was grilled using lump charcoal and oak wood chunks, on an Oklahoma Joe's Highland.
