Grilled and Smoked, then Reversed Seared Porterhouse Steaks on a Pit Boss 1150 Pellet Grill smoker.
Porterhouse steaks are cut from the rear end of the short loin and thus include more tenderloin steak, along with (on the other side of the bone) a large strip steak. T-bone steaks are cut closer to the front, and contain a smaller section of tenderloin
Porterhouse steak is better than a T-Bone at its best. Beef at it's best.

Smoked porterhouses might be the best meat that exist. Smoke to 125F, then finish it off on grill/open fire until about 135F. The temp when resting will hit 140-142 which is perfect.

T-bones? You should have known that was a porterhouse as soon as you opened it. Your identifying both sides of a Porterhouse, but calling it a T-bone. Turned out looking delicious BTW, great job 👍

You are correct, however the package stated Tbones. I thought I mentioned that I was surprised upon opening it to find porterhouses.

Depends what country you’re in. In Australia they are T-Bone steaks. Our porterhouse steaks are bone free. Either way they look delicious.🥩

Pulling the probes out of meat at that internal temp is not a wise move... the internal pressure can force the juices to pour out from the hole where the probes were. But it can be hard to handle the meat with the probes in.... win some ... loose some,

😂 sorry bro but those are not porterhouse steaks. To be considered porterhouse they need to be at least 2 in thick

Incorrect. thickness does not matter, however I'm sure you can find false info on the internet to backup your assumption. A porterhouse is nothing more than a T-bone, BUT with a Fillet on the other side bone.... strip steak on one side of the bone and a tenderloin filet on the other side of the bone. Many porterhouse steakes are at least 2 pounds, but not a requirement.

Hi !! great video, I have a couple of questions ! How long did it take you to do those steaks? Would you recommend the pitboss to be use in the daily basis with not a lot of time ? Or is this more for the weekend? Thanks !!

Depending on the temperature outside and wind, it can take 1.5 hours to smoke and sear the steak. This BBQ session took about 1 hour to smoke then sear. If your in a rush, it might be best to own two different types of grills. One pellet and one gas/charcoal.

Does your 1150 have issues holding a steady temp under 300? I keep reading that on reviews but I am wondering if it is user error. This will be my first smoker so I want to be sure.

Don't forget to trim a little of the edge fat that and season the edges too. Outer fat is not as tasty nor melts like intramuscular fat so you can discard it and prevents the salt to penetrate the meat.

Closed to the most allowable adjustment, do not force. You will notice that it does not close all the way, so don't force it.

When in doubt about how tender the cuts are use the brining method of adding equal parts salt and sugar into a water solution with some seasoning added and placed into a ziplock bag with all air removed. Leave it refrigerated over night or up to 24 hours. The marinated method does nothing to make tough cuts become tender because it only coats surface and salt seasoning draws out moisture which makes steak even drier.
