Smoke Mode and Reverse Sear on the Pit Boss 1150

We decided to try out S or Smoke Mode from the Pit Boss 1150. The temperature for it is 180 degrees. Our seasoning for the New York strip steaks is Meat Church Holy Cow. Fantastic flavor, especially if you are looking for a Texas style seasoning. This one is good .

just got my PB1150 today, been watching your videos to learn the ins and outs of this smoker, Im coming from a 36 inch blackstone griddle that I still use religiously and a masterbuilt electric smoker....I am so excited to cook with a pellet smoker! Thanks for the great videos!

Hey man I have this smoker too. Glad to have someone making consistent videos and enjoying the craft. I would like to see more about the cooking and less about the temp/controller. I love seeing methods, results, and regional differences and cooking styles. I use grill grates and they do fantastic. Just have to be patient and let.them get up to 450+ temp. Hey man thanks!! We've just seen folks complaining about the temps and wanted to show different examples of what works for us. We have a vertical series 4 from Pit Boss as well and I think the next thing we'll do is an experiment comparing both the vertical and 1150. We also got some charcoal pellets we might give a shot.

My dad just bought the 1600 and we are lighting it up today! Smoke mode works good on my Lockhart though! I can put a smoke tube or two in my bottom grill and my smoke cabinet will hold great temp and smoke

Hey brother. When you reverse sear and don't want the bar in the middle, just remove one of the grates and slide the other one over the fire pot. Then you won't have the bar in the way and get a better sear mark. 🤙🏾

I have been using charcoal for 40 years and just bought a Pit Boss pellet grill. My grill did the same thing. Take the shield off and vacuum out the pot, then turn it on the smoke setting. It needs to put enough pellets in the pot and build them up until the ignitor can touch the pellets. This will cause the grill to overshoot the temp. If you wait it will come down and maintain 170, 180. It just has to burn off that initial startup of pellets.

I appreciate the information. Fortunately, it ended up being a controller firmware issue and has been rectified. I have an updated Smoke Mode video actually and it built up bark almost like my old offset did. Be sure to check it out, especially if you got yourself a Pit Boss now!

I have a pb1150ps2 for it the "s" is for a recipe setting where you can set up to 9 steps of cooking, each step you can control the temp which relates to how.much smoke the chamber has. The manual talks a bit about how to set.up the recipe steps. There is a video I saw of some explaining the "S" step saying the lower the number the greater the smoke. There are two settings for it, one being S for smoke which is 180* and the other you have to actually go to S and then select the recipe button to activate it. When you leave it in S for smoke, the pellets come out just enough to smolder for a good bit then it ignites to keep the temps back up and then more pellets are fed to smolder again. What you are referencing to is the old timer P settings that these PID controllers do not have.

Just an idea for you...if you are doing steaks, remove one grate section so you have room to slide a grate directly over the searing area...just an idea. I dont have an 1150, but I think I'm going to go get one tonight thanks to your videos, so thanks! There is a lot of negative reviews but I think its exactly what I want, and I'm confident enough now that i can make it work...I'm willing to risk it anyways!

You mentioned you did not like how the grates had that center bar - preventing better sear marks on your meat. The way I handle that, is I simply remove one grate panel, then situate the center grate directly over the sear box flame. Unless I am cooking a ton of food and need all 4 grates in, no reason to keep the 4th grate in place.

180 will make jerky, might need to play with exhaust turn it up or down and see how temp reacts, yours is all the way up allowing a lot of heat to escape

@@jeffhassell129 just type smoke tube on amazon there are a bunch. It's pretty much just a tube to put pellets or wood chips in the smoulders and makes extra smoke.

Hi Greg. I've never heard of a smoke tube. What is it? I'm curious because it may be something that I could use too. I have a new Pit Boss and I've been smoking all kinds of meats with it and it's one of the best purchases I've ever made.

@@jenkins80526 just google or search on Amazon. It's a small tube you put extra pellets or wood chips in. It smoulders and doubles your smoke. Also check out smoke daddy's cold smoke generator great for cold smoking cheese.

Excellent video! I am definitely going to do this method the next time I do steaks on my Pit Boss. I mostly use my Pit Boss as a smoker, but I love that there is an option to be able to grill steaks and burgers once in a while so overall, I'm really happy with this smoker. I wonder why If the pellet burner is in the middle and that's where the heat comes from, the right side of the smoker hotter?

The stack is short and not wide enough to dissipate the heat efficiently so the heat collects below the stack (right side) before escaping. Companies build pellet smokers to look like off set smokers with the stack to the far side but it does a poor job at convection.

If the smoke leakage is a worry for you... first your probes sticking out the front lid are most of the trouble. 2nd you can order some Nomex self-adhesive strip tape (1/2 in or better 3/4") and run it around the lid seal area. That way even with the probe wires coming out through the lid you should still get a better seal.

How long does it take the pit to reach 250 degrees? As per a RU-vid video it stated that it take 30mins to reach 250 degrees and over 40min for 300 degrees

We leave it in the Smoke setting until we hear the flame come up. From there we put it to the 300* mark. If I want 250, I just let it get up to 255* and then drop the setting to 250. It usually takes about 10-15 minutes or so.

Hey William, we do have a cover for it. Got one from Lowes that is universal for larger grills at half the cost of the Pit Boss one. Fits real good and it's been through some very harsh rains without issues.

I bought mine from Lowes yesterday. On the box it specifically says for 1100 and 1150. They are new.

@@chriss9340 mine did not say that like two weeks ago when I got mine. All I can say is the one for the 1100 fits. My local Lowe’s don’t even have the 1150 yet I had to drive to one an hour away to get the smoker

The smoke temp should be about 160 deg. You can adjust the P setting to bring it down so it smokes the whole time…

This is a PID controller. No P settings like the timer controllers found in the previous models.

I think smoke mode usually 180 -250. That's the smoke mode on my stick smoker.

Yup its 180. On a stick burner you can go hot and fast with good smoke flavor but I've noticed on pellet smoker it's not as pronounced. Don't get me wrong the 1150 does a good job but nothing like an actual stick burner.

Pit boss has a firmware update that is supposed to fix the crazy temp changes and allow 10 degree changes up to 300 Degrees

There is only 1 S mode, the rest are temperature settings. They all give off great smoke but S mode is the best to get as much smoke flavor as possible.

Ohhh..so set it at 180 and that's smoke mode or just leave it in the start up mode and don't set a temperature?? I just got mine and first thing I did was replace the dang PID controller. I don't know if I see this mode..how do you access it or set it?

Yup, as soon as you fire it up, it's going to be in S or Smoke Mode automatically.

Update: pitboss says S mode is not smoke mode just part of start up cycle. This newer model does not have a smoke mode..just go lowest setting eg 180F° to get maximum smoke. Cheers

You've got a lot of smoke coming out around your lid, maybe the fireproof smoke tape would be a mod you might consider?

I was thinking about that too. It leaks sure haven't found it to be a negative effect other than probably consuming a bit more pellets but a better seal would be the best thing!

I do about 4-5 hours on every smoke my man. I usually say it out loud how many hours it's been, at least I try to but 4-5 hours is all I do on the smoke setting.

I think smoke setting on these is 225 or lower. Traeger is the one that advertises 180-200.

I noticed you were rushing everything and not letting the smoker reach temp. You set sear at 400 and you put the steaks back in when it was in the 200s

I don't worry about the temps when I'm searing other than how the flame looks. Sometimes, the flame won't get big enough to get a very good sear if you leave the lid closed. If you open it up, it'll get more oxygen to grow a bit bigger.

The S-mode or, Smoke mode is not regulated by temperature it is regulated by auger speed pauses not temperature so that you, some models have a P setting or a auger speed setting to increase, or decrease smoke and, to sear you open the slider over the burn bowel, and sear your only for a few minutes.

Different methods for sure, that's why this one is called Reverse Sear. If you have not tried this, I'd recommend doing so. It's probably one of the most popular way of doing a steak.

Man stop it, I have the same grill/smoker ... It doesn’t hold temp period if I wanted to manage a fire I would use my offset ... Pit boss 1100 controller is much better! Doesn’t take near as long to come to temp. I understand being positive though! I just keep it real!

@@twoods555 Not sure what to tell you at this point which is why I mention in the video that even after all this, and doing the Temp Probe Mod, call Lowes and return it. PitBoss, from what some folks have been saying, is telling customers that there will be instructions on how to update the controller this coming week. Whether that holds true or not is beyond me. Just saying what has helped us and what has helped several folks here as well.

@@twoods555 they have an update on the software you have to contact pitboss and they will give you a mailing label to send in they updated the firmware to allow 10° increments and to help hold temp better for the pid controllers 🙏

@@eristicfreethinker2098 to be honest, most folks that have commented on this unit and have had issues have been addressed by the company. There hasn't been a time where I had to worry about this unit, even with my first gen firmware. Pit Boss were made aware of this issue and rectified it for everyone rather than just telling people to buzz off. I feel confident that if anything should happen, Pit Boss will make it right as they have showed already.
