Gricia risotto is a first course with a homemade taste, with perhaps little form but a lot of substance. One of those that I always want to make when I'm very hungry but the refrigerator is empty. For the creation of this tasty first course, I was inspired by the great classic of Roman cuisine: pasta alla gricia. And of this recipe I have kept all the main ingredients such as bacon, pecorino and pepper. Instead of pasta I obviously used rice. Well, the only precaution is to use suitable rice for risotto. which maintains long cooking times.
The secret to making a good risotto is to toast the grain and you can realize that this has happened by observing it, when it becomes translucent you can start adding the ingredients for cooking, in this case I used simple hot water, but you you can also choose to add good vegetable broth as long as it is boiling.
