Growing Caper Plants in my Arizona Garden - Capers! 

Mate, I have two caper plants planted in a rocky terrace and beware .. they grow BIG! I mean 1-2 metres wide! So no way are they going to like being planted like a lettuce, the way you have them. They are also long-lived, decades long. So it is best to treat them like a garden shrub, rather than a vegetable. Okay? They also make good, generous ground covers, and will grow in any inhospitable site, eg ugly, dry corner of the yard or as I have, over big rocks (hotter and drier the better)on terracing. Water to establish them in the first year, then ignore them. If you leave the capers on the bush, they will produce a beautiful albeit caper-smelling white flower, from which the 'caper berry' is produced. These are more rare to buy, pickled the same way as the caper 'bud', but definitely my preference, eaten as you would an olive only more exotic. ps. I live in sunny South Australia where our long summers have weeks of temperatures over 35 degrees celsius, often over 40 degrees and NO RAIN. (We have wet winters.) I hope this helps and gives you a better idea of how caper bushes grow. Just think where they grow naturally, on the rocky, dry Eolian Islands off Italy. Mine are over 12 years old now and produce prolifically every year! Cheers, Jen.

Once you get a healthy, large bush growing, did you know that the tender caper leaves are delicious in salad? I've tried it and those leaves are great!

Made me a mango, sweet potato leaf, moringa, strawberry, and okra leaf smoothie this morning because of you all picked from my back yard Jake Mace!

In Italy in the summer it rarely rains and the capers are doing great

I didn't know what capers were until I bought a small jar. I guess they're good with mutton.
