Guyanese Vegetarian special is paratha roti and dhal accompanied by fry ochro, pumpkin or spinach.
Paratha or oil roti:
Ingredients:
4 cups all-purpose flour plus 1/2 cup for dusting
1 tsp baking powder.
4 tbsp oil, ghee,
1 tbsp butter or margarine room temperature
1/4 cup oil for cooking/basting
room temperature water to mix.
Dhal (Split peas)
2 cup dhal (split peas)
10 -15 clove garlic.
1 medium onion
1 wiri wiri pepper
½ tsp turmeric
½ tsp Garam masala
Salt to taste
Fry Ochro
1 lbs ochro (Bendi)
1 Medium onion
4 Clove garlic
¼ cup oil
1 wiri wiri pepper
Salt to taste.
