Habanero Hot Sauce
1 C white vinegar
1 C apple cider vinegar
1 C water
1 Pint tomato sauce (we use homemade)
27 habanero peppers (we grow ours)
1 Tbsp each: salt, black pepper, onion powder, garlic powder
Add liquid ingredients together and add seasonings. Once you are close to a boil - add whole washed peppers.
Cook on a low boil for one 1/2 hour.
Let cool for a bit and then blend up whole peppers.
I cannot caution enough - do this with a mask on and with a lot of ventilation. Do not attempt this in your kitchen!
Return to heat and low boil for 1/2 hour to reduce and thicken.
Place sauce in clean jars and hot water bath according to the Ball canning book.
