Sausage production has been known since ancient times, it was produced by the ancient Sumerians, Chinese, Greeks, Romans and other peoples. Food was mainly produced for durability reasons, which enabled its longer-term storage. For example, Homer also wrote about this food in his Odyssey, the dramatist Epicharmus called one of his plays Klobása. Sausages have been known since time immemorial in the Czech lands, on the one hand, they were made at home in the countryside, and on the other hand, they were made in the cities by butchers, who were in the same guild with butchers since the 13th century. Meat was preserved not only by smoking, but also by drying. In many households, especially in winter, sausages are still smoked according to traditional recipes.
