For those wondering, the reason it doesn't mold is that the high salt content causes the burger to go stale before mold can grow. If you put it in an airtight container to reduce moisture loss, McDonalds goes moldy like everything else.

Mold needs moisture to grow. The food pretty much dried out to the point that it couldn't grow mold. Store it in a humid environment and it would look completely different.

That's what Trans Fats where invented for, it is basically a liquid plastic that can be fried into foods. No it isn't healthy to eat and that plastic fat is very hard to get out of your body. Trans Fats are usually in fast foods and muffins and cakes.
