Thank you. Finally someone to educate me about this. I thew out my quality Italian based non stick pans once I learned the dangers of teflon many years ago and replaced with tri ply clad but missed non stick so much Im getting the new healthier version in Oxo Pro line. With your info I now know they will work well.

I have Caphalon cookware that I bought 30+ years ago. It still works great ! It looks brand new pretty much and I don’t plan on replacing it. The fact it is not non-stick isn’t a problem as long as I preheat it before I start cooking. This was helpful. I was wondering why they stopped making it. Thank you.

Your old cookware is probably genuine 'hard anodised'. Most "affordable" "anodised" cookware now is a con - as our host says, it's just anodised aluminium with a non-stick coating added to it (which will last only last a few years with regular use, at least in frying pans and woks, where it's subjected to relatively extreme thermal cycling). A real 'hard anodised' surface lasts MUCH longer (it's very hard indeed, almost diamond-like) but requires a lot more care with temperatures, cleaning and seasoning to keep it relatively non-stick (somewhat like cast iron).

I have a small wok that is about 30 years old, hard anodized but not non-stick. It’s great, as long as you use oil or butter before you cook.

I think the confusion lies with people thinking "hard anodised" applies to the interior of the pan i.e the actual cooking surface that touches the food. People can't reasonably understand how the outside of the pan can leach into their food and this video does nothing to address this either. You need to break it down that the whole pan is hard anodised and that the non stick coating on the inside of the pan sits on top of it. When the non stick coating wears away, that is when the metal leaching is more predominant but by that point people should be more worried about the non stick coating leaching into their food before they worry about anything else

Anodizing material only “coats” the outer layer. It is just more durable. Not safe. Cooking in aluminum without a coating is unsafe. Aluminum is toxic over time with regular exposure. Effects nervous system.

Hard anodized cookware is common among backpacking gear, and a safer budget option. Costs around as much as stainless but weighs less.

I have an old Commerical Aluminum Cookware (Calphalon) pot thatooks like it might be their dutch oven type pot with a carrier handle that's at least 30 years old.

I bought mine in the 80s and love them except they have gone from black the first 10 years and now have grey interiors up to the waterline! Lol but color doesn’t hurt

@PrudentReviews I think the point is that you didn't fulfill your videos title. I have quite a few hard anodized pans, but don't buy non stick. They can be frustrating to cook with. I was hoping you would elaborate, show the differences, rather than just saying they're largely synonymous now...

What about the impurities in the metal used? Some cast iron pans are made with recycled material that may include old automotive parts etc.

I'm Fairly certain that the temperatures they used to melt iron to become liquid again to be poured into a mold would all but eliminate any chemicals left on them from ANY industry. But, that being said, I too would rather have my cast iron, or otherwise, be 'virgin' than recycled as well. Just in case. Ha-ha!!!

It’s a real shame that one can’t purchase any pans that are just hard anodised. In the camping world it’s possible to purchase hard anodised frying pan/skillet form Firebox stove or Ali Express but these are designed to portable and are not as thick as one would want for home use. It’s also a bit strange as there are many hard anodised baking trays but manufacturers seem to want to cover everything in Non stick coatings.

I know! The only place I could find hard-anodized cookware without non-stick coating is eBay. And those listings are Calphalon Commercial pans that have been discontinued.

All my camping cookware is hard anodized without a non stick coating. I do have a bunch of stainless steel but they're so thin I have to be careful. They also all double as my at home or in the RV or on a friends boat cookware. I use my camping tiny cookware as my at home sauce pans daily. I did manage to find a set of hard anodized yet without a non stick coating in full size at Williams Sonoma. It's called the high heat outdoor set. It's advertised as non stick but it has no non stick coating. I only bought it because of the removable handles. To make packing them for camping or in the RV easier. And also to be able to use them in a counter top oven. It's pretty easy to figure out which anodized aluminum pans do not have a non stick coating in pictures. Lack of shine or glare. If you don't see a glare or shine or reflection chances are good that is does not have a coating.

Hawkins, a Indian company still sells hard anodized cookware without non stick coating. You can buy them from your local Indian shopping store or you can order it from amazon.

All-Clad HA1 is a good option. It’s hard anodized aluminum with a steel base plate which makes it compatible with induction.

Using nonstick cooking spray is the worst thing you can do to a nonstick pan, use butter or oil, as the chemicals in the spray build up on your pan and actually make your pan worse, i just found this out a few years ago.

I found some GHC Magnalite hard anodized professional cookware and it seems to be naturally nonstick. Grits and oatmeal wash out easily. It was made in the 1960's I believe.

Correlation does not equal causation. There hasn't been any definitive proof that aluminum is what causes Alzheimer's. If that were true the rate of Alzheimer's would be a lot higher since a majority of food industries use alluminum cookware.

I'm under the impression as a consumer that there exists a TRUE NON STICK vs. Pan with non stick properties. Meaning: Nonstick with "Seasoning" (Whatever the hell that means.. butter and oil) and Nonstick without "seasoning". And let's be real. My calphalon pans do stick a bit without some oil and butter. Correct me if I'm wrong.

To clear this up, "nonstick" is pretty much always referring to a specialized coating that prevents food from sticking to the pan. "Seasoning" is a process by which you can create a nonstick layer on carbon steel or cast iron cookware. This isn't typically as effective as engineered nonstick coatings, but you can repair it and improve it over time unlike engineered coatings. And regardless of coating, you can keep food from sticking to anything by preheating your pan and using the right amount of oil

The thing is the not body worry about health when you're buying the product and you didn't mention anything about it. I undestant that aluminum has much about alzheimer disease. I want to know if the product is save from the aluminum integrated into the materials used in the product. If somebody see this coment and kwow scientific about these let's know. thankyou.

Read this from the Alzheimer’s Association. It states, “During the 1960s and 1970s, aluminum emerged as a possible suspect in Alzheimer’s. This suspicion led to concern about exposure to aluminum through everyday sources such as pots and pans, beverage cans, antacids and antiperspirants. Since then, studies have failed to confirm any role for aluminum in causing Alzheimer’s. Experts today focus on other areas of research, and few believe that everyday sources of aluminum pose any threat.” www.alz.org/alzheimers-dementia/what-is-alzheimers/myths Additionally, the cookware I talk about in this video has a non-stick coating, so your food doesn’t come in direct contact with any aluminum. So the chances of it leaching into your food are very slim.

Many people say aluminium has a better thermal conductivity than steel by explaining it heats faster. But almost no one brings into attention that it cools much faster and has therefore a weaker heat retention.

Most "hard anodised" cookware isn't hard anodised, it's just anodised aluminium with a non-stick coating, i.e. it's a con. True hard anodised pans have no coating and can last practically a lifetime with good care (or at least, a LOT longer than the few years a non-stick coating will).

Neither is a type of cookware I will use. Had the original old Calphalon years ago. it was such a rip off. Hate aluminum cookware no matter how it is "covered". And non stick is just awful... lasts a couple of years maybe. They just have never perfected the technology of non stick. Hard anodized was a joke because after a few years of use all that anodization was gone. It makes me sad to think of how many of us have been ingesting aluminum from the aluminum frying pans so commonly used in so many restaurants. Stacks and stacks of them from restaurant supply stores sit above the line in thousands of restaurants. Many are changing over to stainless clad cookware, thankfully.

Looks like just another one marketing bullshit. If you get to feel the advantages of hard-anodized surface BENEATH the non-stick coating layer - you should throw your cookware in the trash at this point, because the layer is ruined.

He makes things even more confusing. He seems to be a person who has a lot of information about the subject because he is good in academics, but he does not actually understand the subject he is talking about. More like a person who has studied something about metallurgy but has not actually used a pan and studied things with a hands-on approach. Instead of taking about the base he should talk about the cooking surface as to whether it is hard anodized or non-stick. Hard anodized is a type coating that is applied on to an aluminum cookware especially the cooking surface to make it harder and resistant to scratches. It is different from a non-stick coating as it is bonded to the metal by a much more extreme process and becomes a part of the metal on the surface, but it does not extend very deep inside the surface. The process makes the metal surface of an aluminum pan much harder, but food will stick to it. Occasionally he is showing the base of pan and claiming that it is hard anodized when the base being shown is clearly not hard anodized as hard anodized has a darker color to standard aluminum color.

​@@PrudentReviews I have watched the video fully. You should have elaborated on the experience of cooking on a Hard anodized cooking surface without any teflon coating. That should have been the focus area rather than a whole lot of technicalities that digress from the main focus area. A Hard anodized base not that important but plain and simple Hard anodized cooking surface should have been elaborated on with example of frying an egg on it but on pan without additional teflon coating.
