I am from Iraq and this is an ancient vegetable that we've been using for centuries and the way we eat it we pickle it just like your normal cucumber pickle and it tastes amazing so crunchy

Grew these and they werent sweet straight out of the ground and i didnt understand how people were calling them sweet , but after sitting on the counter for about 2-3 months they became absolutely sweet and well worth the wait ,so as far as i have seen if you want it sweet let it sit for a while, i will be trying to propagate as much of these as possible they are so good

I think it'd be hilarious to talk about these with a French person :) "Would you like a ground apple?" "Are you making fun of me for how I say potato?"

Yes, in French we call this "ground pear" (for yacon) Ground apple is the potatoe... And potatoe can be understood as the sweet potato...

I'm convinced that gardening saved my husband's life. Every time I got mad at him I would go out and hoe the plants! True statement-- we did divorce 6 months later but it really helped with my anger issues toward him. It was a win/win situation really. Prettiest garden I ever had!

I have yacon growing at the moment, two are in pots and one in the garden. I found last year the ones in the pots grew more tubers than the one in the ground, guess that’s due to the soil type. I’m growing Jicama this year also which I have never grown before, it will be interesting to see what that tastes like.

I tried growing yacon in my backyard garden a few years ago. It didn't survive my zone 9b heatwave. I'd like to try it again in the future. Maybe I need more mulch and water to keep it going through the blast furnace here.

This seems like a plant with some interesting possibilities... would it be suitable to turn into a kind of “applesauce”? Maybe blended up with some strawberries and canned. It would be pretty neat if it would work that way. Apple trees can take years to begin producing, and it seems like this thing only takes a season.
