Scooped and measured foods or dicing foods, freezing them and then putting them in a Ziploc bag is what I do: bell pepper, celery, green onion, diced, for example. I even sliced meat into cubes and did the same. This helps me cook for one person or two persons and so on !

Stuffed shells are one of our favorites. I make mine just a little different. I use only 1/4 - 1/2 pound of ground sirloin in my sauce, and the shells have the ricotta, parmesan, mozzarella and an egg. Sometimes I put in chopped spinach if my husband won't be home (he won't eat it if it has spinach in it). I layer sauce, the shells, sauce on top, and top with the mozzarella. Bake for 30 mins at 350, then the last 5 minutes I put the broiler on (keeping pan in the same location, I don't move it up under the broiler) to get bubbly and crispy on top. Yummmmmm. it's actually on the menu for this week. 😊 I love your casserole dish, the design is so pretty. Where did you get it? I also love the colors in your shirt, so watercolor-ish. So pretty.

Having never tried Ricotta Cheese, how does it differ from Cottage Cheese ? I love most cheeses and so I'll have to try it one day. My wife is not a great fan of any cheese and so it's left to me to eat the lot !!!!!!!!! Dave and Sophie xxx
What a hard job you have eating the cheese for her 🤣🤣🤣. Ricotta is a smoother cheese, it has a slightly sweet taste where cottage cheese has a tangy flavor, to me anyway. ❤️
