Lasagna! What can you say other than it is saucey, cheese, goodness. Make double and put one in the freezer, or just freeze any leftover sauce for the next time you want pasta. This is one recipe you don't want to miss. It is so easy and quick to put together, let it sit and simmer for about an hour, no fussing with it, and you have a delicious meal at the ready. Boil some noodles, throw in some cheese and you're done. I hope you will try this and let me know if you do. Recipe below.

Ingredients:
1 box lasagna noodles, follow directions on box
Sauce:
2 Tbsp olive oil
1 medium onion, diced,
1 Tbsp minced garlic
1 lb ground chuck
1/2 Tbsp Italian Seasoning
1 Tbsp parsley
1 1/2 tsp sugar
1 tsp garlic powder
3 Tbsp tomato paste
2 - 28 oz cans Italian Style Crushed Tomatoes
1- 14 1/2oz can petite diced tomatoes
1/2 cup grated Parmesan cheese
Cheese mixture
1 32 oz container ricotta cheese, or cottage cheese
2 cups mozzarella cheese, shredded
1/2 cup grated Parmesan
2 eggs
1/2 tsp black pepper
Directions:
Boil lasagna noodles as directed on package. Drain. Lay on oiled sheet pan, sprinkling a little oil on each lasagna sheet just to keep it from sticking. Set aside.
Drizzle oil in a large pot on medium heat. Add diced onion and minced garlic. Cook until tender. Add ground chuck. Brown and drain excess grease. Stir in tomato paste and cook a couple of minutes. Add tomatoes and stir in sugar, Italian seasoning, parsley, and garlic powder, and parmesan cheese. Bring to a low boil. Reduce heat and let simmer for at least one hour.
Meanwhile, mix together ricotta cheese, mozzarella cheese, grated Parmesan, 2 eggs, and black pepper. Set aside.
Preheat oven to 375 degrees.
In baking dish, put a layer of sauce on the bottom of the dish. Lay noodles over sauce. Spread ricotta cheese mixture over noodles, cover with more sauce, sprinkle with little bit of mozzarella cheese, repeat, noodles, cheese mixture. Finish with a layer of sauce, and sprinkle with Parmesan cheese.
Cover with foil and bake 35 minutes. Remove foil and increase oven temperature to 475. Sprinkle remaining mozzarella cheese and sprinkle with Parmesan cheese on sauce. Bake uncovered 10-15 minutes or until golden and bubbly.

Karen as an Canadian born Torontonian from Italian immigrants we put our noodles in cold water to stop the cooking process and place them on clean tea towels to dry before assembling our lasagna.❤

My hubby is from italy and we eat "macaroni" ....italians don't call it "pasta". And they dont call the sauce "sauce" they call it "gravy." My lasagne isn't that great so I will try yours because everything you make is great. We've been married 48 years & I cook & bake for him & me everyday (twice a day). He just retired and now I have a pot washer! Karen, try a wedge of real parmesan or better yet Romano and grate it yourself so it's fresh. It's soooooooo much better than that "green canned" dried out parmesan. Love you and pop so much! Lisa in San Diego

I always use Romano and grate myself. I cut the rind off and throw in my gravy. Sooo good. I also grate my own mozzarella. Yum!

So true even if she buys shredded or shaved Parmesean Parmigiano it would be so much better then the bottle of the dried bottle stuff it' just doesn't have a good taste even getting the store mixed Italian brand.cheese is better.then that bottle stuff

@tiachandler5350 true. I buy shaved and grated parmesan all the time and love using it. However, if the green top is all you have, then use it.

I am Italian and we add eggs to our ricotta. You can soak your noodles in hot water no need to boil which breaks them often.

I love your lasagne recipe, which is like my American recipe. The reason I say this is I live in England and instead of using a filling of ricotta cheese or cottage cheese filling, they use something called bechamel sauce ( white sauce ). Add different cheeses to the sauce, then layer the lasagne using bechamel sauce, mozzarella and Parmesan cheese, along with the bolognaise sauce and noodles. I make both styles of lasagne, and my family usually tell me which style of lasagne they want ( American or English ) lol! I’m glad you add sugar to your sauce, I do the same thing for exactly the same reason. Good idea freezing leftovers! I use lasagne noodles in the chiller section as opposed to the type you have to boil. Makes my life a whole lot better. I have also tried lasagne noodles that you don’t have to cook, but the noodles still come out not cooked, so don’t bother with that type, since it doesn’t do what it promises.

Cottage chews actually works best. Ricotta cheese can be grainy. I learned these from Cooks Country.

My mom always used cottage chews. I think it has more flavor than ricotta in addition to the fact that ricotta can be grainy, as you said.

You can freeze parmesan rinds and chuck them in while the sauce is cooking. Makes a real difference. Also bay leaves are good x

SIMMER FOR ONE HOUR, WHY?! Here is why: You want a well-set lasagna rather than a sloppy fall-apart lasagna. The consistency of the meat mixture matters. Simmer to reduce the liquid and how you test this is: when you slide your utensil through the meat sauce, it should hold its shape, not runny/saucey/liquidy. Also, when the lasagna is finished cooking, remove from the oven and allow it to firm-up or set by letting it rest/cool for 30 minutes; then, you can cut and serve. I prefer cottage cheese, it has a milder taste; ricotta cheese has a texture that can be gritty/grainy and it has stronger taste. Yum! I add oil to the water the noodles cook in. When I drain them they do not stick. Luv lasagna and salad.

You can use regular lasagna noodles without boiling them . They will cook fine in the oven with the sauce and all. It’s yummy either way!

I also cook my lasagna sheets in the meat sauce and lay them to cool with cling film layers in between. The pasta absorbs the sauce flavour and helps thicken it. Also its one less pan!

I have never had lasagna. Being British, Mum never made this. It always seemed daunting to me. But, since I trust your recipes, I’m going to try this at the weekend! Wish me luck! I’m going to substitute the cheese with real cheese. The canned stuff has been reported for having additives that are suspect. Lol. I can’t wait to eat this. Yummerlees. The first thing that went in, the onions, yum, I love onions. No matter what you make, it's all home cooking. We love it here out west. Be blessed, Sonja and Christopher. By the way, were we supposed to have smelled it cooking. Psychologically we most certainly did. It's crazy, what our minds can do. I also use tomato paste in a tube.. It just makes sense. This looks so good and I’d love to have some carbs.. Right now my husband and I are eating nearly no carbs… When we lose 20 pounds then we’ll have a cheat meal with a really good dessert, like a hot fudge brownie. Just limit ourselves to know more than 3-4 squares of brownies 😂. Great to see you my friend. Always enjoy no matter what you’re cooking. Love ya much.. ❤I always add butter to my noodles while they’re cooking. Helps them not stick together.

Don't know why, but I got so many lasagna recipes popping up the last few days...had to make one, found a recipe that uses a beshamel sauce, fresh lasagna noodles and cream in the meat mixture, well, had to try it, it was best ever for me... Miss Karen, yours looks wonderful, it's the one I've always made, tried and true, no fail❤️ your husband looked to be so excited about that plate, g'bless🙏

Karen, that looks wonderful. I love it that you put plenty of sauce in between the noodles. I've eaten lasagna before that people have brought to potlucks, and it was dry and almost crispy because they have "skimped" on the sauce. Yours looked great. Thank you.

I don’t boil my noodles. Assemble your lasagna. Your noodles will soften in the sauce. It saves that one step. I also use dry cottage cheese. 🇨🇦

Lasagna is my go to Italian dish gotta get that everytime I go to Italian restaurants. To me lasagna is the dish that makes you be able to tell if the Italian place is good or not. I agree spaghetti isn’t my favorite

Great video as always Karen! I’ve been thinking a lot of making lazana lately. I have an Italian meal coming out tomorrow. I love the way you mixed the ricotta with and egg and parsley. You dressed it up. I use the same cheeses you do but have a few other additions and a different technique. I love how you made yours, I wanted to take a bite out of it when you held it up ha ha. Great meal👍 Cute how you and hubby tasted it in the end 🥰

I'm sure your's will be great. I will eat it and enjoy it, it's just not my favorite. Well, maybe I should explain, I would rather have it with just sauce (gravy) and no meat in it.

That looks delicious but I do prefer cottage cheese over ricotta. My mom always made it with cottage cheese. You’re a great cook! Question: what do you do with leftover oil that you fry things in if it’s more than a couple cups?

Good evening Karen and Hubby....my oh my that does look delicious. I haven't made lasagna in years. Living by myself, it just isn't something I fix. However, my niece and her husband visited me from Canada in the fall, and brought a large casserole of it and we had it one night then Cheryl put up the rest in freezer meals for me. I felt like a queen. Thanks for sharing your recipe, Karen. Do you use the same sauce for your spaghetti ? Y'all have a Blessed day.

I have made it and frozen in individual portions. When I want it, I take out what I need. No waste if all is not eaten. 🧡
