4 reasons. 1) Story takes place in another country. 2) That country is not part of 'our' Earth. 3) MC would be suspected of "Money Laundering" for organizing crime in this fictional country. But the real reason 4) Author didn't want to spend time explaining the steps needed for doing business in modern world.
Just making lots of money wouldn't get you investigated by the IRS. Actually their investigations are very arbitrary and typically done on high profile people. What it WOULD get you investigated by is the police, as it would make you look like a drug dealer.

I used to buy for a fair-ground and circus, it was owned by a man who had fought in the Boer War in 1900 ( opps, edited the date for a mistake ) and didn't trust banks, did all of his business in cash. He used to hand me the equivalent of $ 50 000 for the seasons casual purchases, and I kept receipts that once in a while he would ask for. None of the businesses I brought toilet paper and candy-syrup and napkins and sand and fabric and once even an industrial sewing machine off, asked me what my name was even. Are you talking about Sales-taxes?. If you are buying for your own use, do you need to keep proof?. Is that the rules in your country, do you have to explain to your government why you brought a lot of stuff?. Gee, you must live somewhere that hasn't any freedom at all, no one cares if I buy everything I can afford here, and they certainly are not allowed to just ask. IF I got audited by the tax department, they could ask to see my records, but that is the point of cash you know, unless they actually catch you with it, how can they know how much you had?.

Last time I saw a video of this manga it stoped at the corrupt guild guy being beaten and the guild lady opening her guild branch. That quite a few more chapter since then.

hate to tell y'all but the manga only goes for 1 more volume and the person in charge of this only did volumes 1-4. its about 12 mins of reading and you can finish the story up to date.
The real challenge of stories like this would be for the MC to figure out how to mass produce the products from out world in the fantasy world. That way when he dies he doesn't have to worry about the people in that world having to go back to life without modern goods.
The profit margin wouldn't be as good though; he's selling matches for 500¥ that are generally given away for free in convenience stores here on Earth and can be bought by the thousands for just a couple of bucks. If he manufactured them in a world that isn't industrialized, costs would go up significantly. Same thing with the bear mace. He'd have to create chemical, electrical, industrial, metallurgical, hydraulical, pneumatical, etc. systems/industries from scratch just to manufacture those 2 products, let alone agricultural, food processing, etc. if he were to make modern white bread and noodles. Unless he wants to spend all his time and money forcing that world through an industrial revolution, which would also require educating a large portion of the population on how to build, maintain, operate, and expand upon all those different systems, and he'd be hemorrhaging money the entire time until everything was in place and production and sales were operational for long enough to start making his money back, which would be decades when you figure in the education and skills training to create the equipment necessary for all these endeavors. Tl;Dr: it's way more efficient to just keep dragging things back from earth where everything is already made cheaply.
There will always be people who study it, figure it out and reproduce it. Thats how human civilisation came about, reverse engineering is possible for all if not in one generation, then over multiple but it always happens
If I were the MC, I'd have ordered lots of goods wholesale to save on costs and also to make sure I had lots of supplies so I'd run out less often. With my profits and magical currency conversion, I'd rent a small warehouse in "our" world and have deliveries made there, since I could open a portal in the privacy of the warehouse to bring the stock through to the "other" world.

Glad to see a MC use dimensional travel to become a merchant. Kind of silly how he realized his stock was being 'scalped' and then moved on without fixing the problem.
It's not uncommon exactly: Making 80K Gold In Another World For An Early Retirement and Sasaki And Peeps are 2 other merchant isekai that already have anime seasons out and completed. 80K Gold is a bit on the trash side of the Isekai quality chart, but it does have a fun episode reminiscent of Gate, which is another great world-hopping anime if you haven't seen it, though it's not merchant based and the MC is in the military. Sasaki and Peeps is a higher quality isekai than 80K Gold and is rather fun albeit more complicated plot-wise with 2 main stories going on, with one happening on Earth and the other occuring in the "other world"; the MC just wants to be an isekai merchant but gets dragged into also working for a paranormal police force back on earth.
That's typical isekai, little to no actual consideration and just shrug off most if not all of the key details unless it is indicated by the plot or so. Speaking of which, "Surviving with Potions in Another World" I think it was? Started somewhat fairly well but started to fell off later, around volume 7 of the LN i think it was? Anyways, mc there also dabbled in merchantalism, I reckon they did it a tad better there like switching the packaging to what might be found locally e.g., wood and glass containers. They also didn't necessarily went overboard with the otherworld stuff despite technically being able to get them. Still full of isekai nonsense but yeah. Might be remembering it wrong but if not, yeah. Not sure if they ever tried reproducing the products locally but I reckon they at least tried to make some of them more local friendly.
