My mom made a similar cookie and included grated apple, carrot and crushed pineapple. She made them big enough to fill a sandwich bag and froze them. We called them hunting cookies because my dad loved to take them elk hunting and said they were a meal in a ziplock.

@@TSunshineful Mom never measured much. She used the oatmeal cookie recipe on the Quaker oatmeal box and added a medium carrot, a small can of crushed pineapple (drained) and a half or a whole apple depending on how big it was and how much apple she wanted. She also put in chocolate chips, raisins or dried cranberries and walnuts. Just a generous sprinkle of each. The dough should be full enough to fall apart when you put it on the pan to bake and the cookies often ended up a handful of crumbly goodness in a ziploc bag. Lol. Sure were yummy though!!

@@dragons8822 Mom always used her oven at 350. I also use that temp for most everything. It works good for these cookies too. Gotta watch close though because they burn quick and can also end up doughy because of the extra moisture from the pineapple. Experiment to get the times right just by watching for the edges to get brown and then if they are doughy put them back for another minute and try again. You can do it!

I called these "Breakfast Cookies ". My daughter was not a big breakfast fan, but two of these and a glass of milk got her off to school in the morning with breakfast in her belly. I used all organic ingredients. Better than any kids cereal out there and she got to brag to her friends that she got to eat cookies for breakfast! :)

My mother-in-law used to make this as a traybake and called it gunge because she had no idea where the recipe came from or the quantities. I think cookies (biscuits to us in the UK) would be easier that cutting slices. Love the addition of coconut. I think someone has already mentioned its similarity to Anzac biscuits.

I would imagine creaming the butter and sugar for so long also helps the large granules of sugar to melt. I have found that quick mixing with short bakes don't dissolve the natural cane sugar enough. Can't wait to try these!

These are excellent! The only changes I made was I only had 1 cup coconut sugar. For other 1/2 cup used organic white sugar. I left out the raisins. ( we are not fans) Husband and kids loved them!

Thank you nice lady. Another great video. -- I think they call them cowboy cookies because, back in the day, a cowboy could live on them while travelling a distance on horseback. Hi Susan! Early Happy Birthday!! Hope you are doing great!! You can actually make these cookies without oats. You can just replace the same amount of oats with more whole grain flour. You could also use a sugar alternative, such stevia. I've also seen a lot of people use dates.

@@GpD79 ty! Yes I use some. I am one who tastes that bitter taste with Stevia, but I use some others. I am interested in blending prunes in a little water to make a paste and maybe use it as a cookie filling, something like that.

Looks delicious. Got my Kindle reader on Saturday. It had nearly two thousand books on it. Nearly half of it I already read but that leaves a lot that I haven't read yet. We got off of school schedule so we've been missing the earlier live conferences. The only later conference we can catch is his speech therapist which is only on Fridays. Think he's grown again as his long pants are about two inches too short on him. I'm guessing he needs the next size up now at least in length. He usually gets the taller before getting thicker. Tend to need to belt or tighten the pants that are adjustable inside of them.

Oh Ann! I think toffee bits would be amazing!! You really can add in anything you want. I might do half toffee bits and half chocolate chips (or nuts or raisins) so that you keep to a one cup amount. Love, Mary

Great question! Sucanat is less processed than “sugar in the raw” but that is a great product to start with as you are moving away from white sugar. Love, Mary

That’s a great question. I usually soak and then dry my nuts for easier digestibility but you can also toast them. ❤️🤗❤️

Wow! life changing recipe, thanks! Did you ever try them with a non wheat flour? spelt is considered a wheat (you probably know that). Same with bread, any suggestion for a non wheat flour that will work with sour dough starter? You mention rye and yes but something not so strong in flavor?

Hi Dianne, That is a great question. I have made these with spelt and einkorn - both wheats but not a non-wheat flour. But this would be fun to experiment with. Yes, rye would be strong. I wonder how rice flour would work...or other options such as amaranth flour potato flour, corn flour, chick pea flour, oat flour, or arrowroot. Arrowroot powder (flour) is easier to find at the grocery store (and very inexpensive at the Asian grocery). And it has been used for years to make cookies so maybe that would be a mild option. As to a nut flour - I guess almond flour might be worth a try. And then there is coconut flour but I really DO NOT like baking with it! In any event...I'll have to experiment! Love, Mary

Hi Elaine, Yes - butter is wonderful for you. And it's the best when it is made from the cream from cows that have been allowed to graze on pasture. Look for a butter that is very yellow. The more yellow the butter, the higher it is in vitamin A, a fat-soluble vitamin needed for skin health, immune function, and healthy vision. Butter also contains vitamin E, which supports heart health and acts as an antioxidant to protect your cells against damage caused by molecules called free radicals. Additionally, butter contains very small amounts of other nutrients, including riboflavin, niacin, calcium, and phosphorus. Hope this helps. Love, Mary

Would this be ok to make the dough and freeze cookie balls for later baking or just keep dough in fridge to bake cookies as wanted fresh baked?

Hi Denise, That is a great question. I have not tried it, so I am not 100% sure how it would turn out. Can you use an alternative low-cal sweetener that has a bit more bulk to it...like Monk Fruit? That might work better. Love, Mary

Oh Wendy!! I love this brand. It’s bobs red mill thick cut old-fashioned rolled oats. My grocery store sells it. It’s often on the bottom shelf in the oatmeal section. You have to keep your eye open for it. Hope you can find it. Love, Mary❤️🤗❤️

Here's the trick: make healthy cookies, don't tell anyone they are healthy. ;-) Hubby and kiddos will snitch and feel happy, and you don't worry (so much). LOL Of course, if _you_ manage to forget they are healthy, we got a problem. ;-)
