When I make veg stew I sauté the onion, garlic and spices first, then add the veg when they are soft. Recently I’ve been adding very finely chopped mushrooms to this first step to build flavor. Also, at the end of the cooking you can add miso instead of salt for umami flavor. For some health reason miso is not to be cooked. I love the idea of using coriander seeds and pouring it over greens. Thanks for another great video!
Ive made this a few times! Love it. The second time I made it I used oriental purple sweet potatoes and a vegan breakfast apple sausage. So flavor profile was a little different than the original recipe. Love your show and your recipes!
This looks great! Freezer hack, use baggies and lie them flat to freeze so they can then be stacked or squeezed between all the other freezer contents, and if you use the colored silicon bags or hit the edges with a colored sharpie you can categorize them by sweet/savory or breakfast/lunch/dinner or bean/grain/potato so they're super easy to spot later. Thanks for doing all the work experimenting :D
This is a total winner though made just 1/2 recipe and still filled the pot. I'm only one person and this will be many, many meals. Not sure why you posted the calorie content Derrick. Might discourage someone and for some reason does not say the "size" of the serving which is key. Even 2 c. of this stew couldn't be more than a couple 100 calories. But just had to tell you THIS is a keeper.

Bay leaves are good when you are cooking onions at the beginning of a dish, I usually think dried have more flavour, especially good in tomato type/Italian dishes, a tip from an old lady I know here in Spain. Before serving take them out.

1/4th proportions- for 1-2 people 1. potato-1 2. Carrot-1 3. Celery - 1 stalk 4. Onion- 1/4th 5. Garlic- 1 big clove 6. Seasoning- 1/4th TBS of each of rosemary, thyme, - Garlic powder - 1/4 TBS ONION powder- 1/4 TBS Ginger powder- 1/4 tsp 7. Black pepper- less than 1/4tsp 8. Coriander seeds- 1/4tsp 9. Bay leaf- optional- 1/2 leafe 10. Salt- 11. Veg broth Add seasonings at the bottom of pot so that they get direct heat Saute for 5min Add broth/stock/water+boullion- total 2,cups, Cover a cook for 20min 7. Add barley/quinoa/rice/: 1/4th cup 8. Frozen corn- 1/2cup 9. Take 1cup of boiled mixture and blend it. Add back 10. Add Other beans- 11. Simmer for 20min 12. Add frozen peas Let it cool down
I’m a vegetarian who batch cooks and was looking for something I’ve not done in bc a while - this is perfect have just finished my second large pot of minestrone and only have a little bit of the really small Italian pasta for it so am either going to put some of that or some quinoa in in place of barley(soz hate the stuff!) thanx - have subscribed to your channel as you made your stew easy to follow!
I keep a ziplock plastic bag in my freezer and all veggie scraps go in there. When it's full I dump it in a pan and fill it with water and make broth. It's usually super good because there's a huge variety of veggies in there, including a bunch of kale stems. Strain it and freeze it.
I'm a 30 year old guy & I never thought I'd be watching a soup recipe on youtube over and over (and a vegan one at that). I love this and it makes my mouth water every time. Good content guys!

@@blackcat3585 That might be the case because they're super high in cars. Try adding some protein powder, if you don't do that already, and some fat, like peanut butter, nuts, seeds...
Coriander is the English name for Cilantro. Also, why onion and garlic powder? Would it not be better to just use a bit more onions and fresh garlic? Also, try putting a bit of Sautee on the onions in the beginning, before you start steaming the vegetables. You may want to try dumping a couple of sliced jalapeños with the veges, if you want to light it up a bit.

Thanks so much for this recipe, Derek! I just made it a second time, so I don't have to think twice about my healthy lunches for days and days to come. I did put the barley in early on because they takes forever to cook, and the potatoes a little later so that everything cooks evenly.
Two things: Why oh why would you add garlic POWDER when you got fresh garlic in there. Why in the world would you half your bayleaves. It's so much easier to find and fish out before serving if they are big and easy to spot. And don't use the liquid from canned beans. It can contain things you don't want to ingest. That's why you always drain and rinse beans before cooking them.
Apparently the garlic powder is full of umami flavor. Not speaking from experience, it isnt sold in my little hole of hell, but if you dont want garlic powder put in some msg or sauteed mushrooms!
The more garlic the better. I do the same. He said why he left the bean juice. Though the bay leaves you are correct. Easy to fish out if you can find them.

Bay Leafs are great for indigestion! In Sweden we often use it in dishes with beans and peas. Swedish Yellow Pea Soup is something we largely still eat once a week here. I have a great Instant pot/Crockpot recipe! I'd love to see more One Pot videos! Thank you guys! 💚

I tried this today and I have a few comments - 1. After adding the uncooked barley cooking time was more near 45 minutes for the barley to be edible. 2. I added about a cup of mushrooms (finely chopped) to the veggies to add an unami flavor. 3. IT WAS AWESOME - thanks for this recipe!!!!!!

The recipe is 150g dates, 5-6 tbs roasted sunflower seeds, 50g tofu, 1cup of water, 1tbs cacao powder, 1tbs maple syrup, vanilla, pinch of salt. Try this, it's about 180 kcal per 100 g, great replacement for peanut butter in cutting days. P.s. I have same nutribullet, it's damn loud)

I had to try this! I just did it in the instant pot. It's great but here's some tips * 8 cups is 1.8 litres (Derek, people not in the US / Canada don't really use cups a measurement maybe include metric too ) * I did 'stage 1' for 12 minutes on high in the instant pot but 10 minutes or less would probably be fine as they are quite soft * I did stage 2 for 12 minutes, could again be done for less. * Season it when you eat it, it's easier to get it to your taste when seasoning small batches * There's doesn't seem much point in saute-ing carrots and potatoes, saute the onions and celery and then add the veg after. It will cook quicker. * I forgot to add the ginger but it still tastes good * It makes a LOT of food. Make sure you have plenty of containers ready to store it in the fridge! * I used red lentils and it worked well Thanks Derek, I've been looking for a good veggie stew recipe but they all ended up like soup. Blending a bit midway is awesome.
I make stew every single day with varying ingredients: The preparation begins the day before cooking with soaking 100 gram of dried legumes (e.g. lentils, chickpeas, all sorts of beans, ...) together with 50 gram of dried grain (e.g. rice, rye, amaranth, buckwheat, spelt, barley, millet, ...). The next day I rinse the soaked legumes/ grains and set it on the stove with fresh water (mostly with about 600 ml). The vegetables that nearly every time go into the pot are some potatoes, a small part of ginger root, a tomato, a onion, some garlic cloves, some carrots. I don't use bouillon cube or "vegetable broth" from a Tetra Pak because the fresh water, mentioned before, will turn into vegetable broth after cooking by itself ;) . After this base is setup, I always add one or two different additional vegetables like beetroot, broccoli, brussels sprouts, cauliflower, celery root, cucumber, daikon, kohlrabi, pumpkin, root parsley, cabbage, zucchini, ... or mushrooms. (The combination variety is nearly endless.) I season this with a bit of salt, caraway, pepper, curcuma and other spices. As a kind of topping I always use some crumbled nuts (macadamia, walnuts, peanuts, almonds, hazelnuts, brazil nut, cashew, ...) together with some leafy green (like chicory) or bell pepper. I enjoy this meal nearly always with some whole grain bread. I've done this probably for some years now, but I'm still not bored and enjoy it every single day. It's super delicious! :)
