Healthy, Whole Grain Tortillas

EASY WHOLE WHEAT TORTILLAS
Makes approx. 16-18 6-8" tortillas
Ingredients:
4 ½ - 5 Cups fresh milled Soft White Wheat or Kamut or Spelt
½ tsp baking soda
2 tsp Sea salt
¼ Cup olive oil
1 ½ Cups warm water
Instructions:
Drizzle half of the oil over the top of dry mixture.
Mix with either forks or pastry cutter until almost a fine powder, and then repeat this procedure until oil is gone.
CAUTION - you MAY NOT end up using all the water.
Drizzle half of the water over the top of oiled flour and mix - should still be dry. Now while mixing drizzle down the sides of the bowl, turn bowl occasionally to make sure all sides are drizzled. Continue mixing (not necessarily pouring water) until a soft dough is formed. It should be moist and slightly gooey to the touch.
Plop dough out on a piece of cellophane cut long enough to form it into a tube (should be about the diameter and length of an inner cardboard of a paper towel roll) cover and let sit in fridge for at least 10 but no more than 30 minutes.
While tortilla press (or griddle) is heating divide into equal balls shaped like hockey pucks. Using a gram or oz scale to weigh the total dough and then each ball will make them uniform.
Begin pressing the ball that you first made first and work your way through the line of dough balls in that order. The setting of the hockey pucks helps the tortilla hold together better.
Follow manufacture directions on tortilla press or press out by hand with rolling pin.
Variations:
Add garlic salt instead of salt and olive oil as the oil for savory seasoned tortillas.
Add 1 TBS sugar or succanant and 1 tsp cinnamon to make sweet breakfast/dessert tortillas

I almost forgot to mention, My grandmother used to make the masa and roll with only a wooden roller pin and throw them on the sarten, they were almost always perfectly round and all the same size and OH MY GOD were they good! We used to stare at her until she was done so we can get one. God rest her soul I don't think I've eaten as good a tortilla since. God bless...

Putting it in the refrigerator helps strengthen the binding process so that the tortillas don't crack so easily during rolling/baking. Great question by the way! Thanks for asking it!

Donna, do you know how to make corn tortillas? Would I use the same recipe? I have the same Nutrigrain grain mill that you are using. What combo of grains would I use? Thanks!

+Tippy Mueller The one 'thing' about corn tortillas is that there is no gluten to hold them together. Usually, the flour used for those is called Masa and it isn't just 'ground corn' that you can do in the mill (sad but true) You could do a work around by adding part freshly milled corn meal and part freshly milled wheat flour (I'd say 2/3 corn to 1/3 amount flour) and they will hold together better and be more corn LIKE but not total corn tortilla. Let me know how it turns out if you try it! :)

@bostero1 ~ Hi! Sorry I'm slow in replying. Have not gotten notices again for a while. I have never used cactus flour. Not even sure where I could get it. I'd LOVE to hear how your experiment goes.....I'm always up for learning about new food prep ideas! I'd think it would work since cactus likely has no gluten. Tortillas then make an ideal experiment. Thanks for your tutorial. It is very easy to follow your directions. I wanted to ask, what was the total cost to make these tortillas in this video? I do love homemade but if it is not cost effective i would rather buy the la fey (so good) at our local health store, they are about $3 for a pack of 10, so if these were say half the cost then I would rather go this route. Again, thanks and keep it up... Gene

Wow. I must have hit 'send' too soon because I thought I'd answered your whole question! Sorry. :/ The cost makes them about 10 cents a piece based on my grain being ground at home. Still bagged flour might cost only 15 cents a piece (yet less nutritious). Great question! Sorry I missed answering it last time. :/

If you use your food processor to cut the oil and water in it goes nice and fast and doesn't work the dough. Place it in a ball and place a damp paper towel on it to rest before rolling them. I would not recommend refrigerating it. You want them warm and soft to roll them.

@nextinline777 ~ I'd say make a half batch and try it. I have a hunch that the baking soda does give it some pliability (is that a word?) but if you keep the dough moist enough you may be able to do without. I'd love to hear how it works out! Bet Blessings! Donna

Roti is just whole wheat flour, oil, salt, and water (and extra flavoring if you like)

Since we use freshly milled flour, it never tastes like cardboard...but we do add the sugar/spices etc for dessert tortillas :)

Well shoot! I never got notice of this comment! YES - you can. It may be a little 'stiffer' after it cools (since butter hardens are room temp) but it would work. Sorry to be slow on the reply.

I like adding sugar (or whatever sweetener of your choice... honey, whatever) to my whole wheat roti so it doesn't taste like cardboard.

Sorry to be slow to reply. Yes just not too much or the dough consistency will change. I'd say about 1TBS per recipe will not alter how the dough feels. Good question!

Nienke Geerts - You mean like the RDA % of each nutrient? Sorry I wish I could have that figured out...but hadn't had the time to figure it. You could probably find a site where you can put in the recipe and it will figure it for you. Might be a helpful thing for other recipes :)

Gosh I am so sorry. I must have never seen the notice for this question. I really am not sure. It's a griddle my son got for me as a gift. Likely Walmart or somewhere. We make pancakes on it regularly (have a recipe for those somewhere) and grilled cheese...anything we do 'in mass' that is flat and too much for a pan. (: Sorry again to be so slow!

I like the idea of adding alternate grains! LOL on the person below who is worried you who are making healthy stuff to eat didn't put chemicals on your hair - as if its important to pretend to look 18 or prioritize choices so we can aspire to be someone's arm candy...

Flat breads have been used allover the world, even up here in Norway where different types of lefse and lompe has been a staple (and every woman developed their favorite method, based on their mother’s and later, maybe their m-i-l too?)... 😋👏🇳🇴
