This hearty beef Chili is made with tender chunks of shin beef simmered in a rich tomato base with bold spices like smoked paprika, cumin, and chilli powder. Kidney and black beans add texture and protein, while the aromatic mix of onions, garlic, and herbs creates a warming, flavorful dish. It’s perfectly served with fresh cilantro or parsley and a dollop of sour cream for added creaminess.
In the UK, shin beef comes from the lower leg of the cow, typically a cut from either the front (foreshank) or the back (hind shank). It's known for being a tough cut with lots of connective tissue, which makes it ideal for slow cooking as the collagen breaks down into gelatin, giving dishes like stews and braises a rich, hearty texture.
In the USA, shin beef is usually referred to as beef shank. You might also see it labelled as shank cross-cut when sliced with the bone in. Like shin beef in the UK, beef shank is valued for slow-cooked dishes such as soups, stews, or even Osso Buco (when cut with the bone, though traditionally made with veal). The cooking method is similar, focusing on low and slow preparation to get the best texture and flavour.

Ingredients:
800g shin beef, cut into large chunks
1 can (400g) diced tomatoes
2 onions, chopped
4 cloves garlic, minced
2 tbsp tomato paste
2 tbsp smoked paprika
1 tbsp ground cumin
1 tbsp chilli powder (adjust to taste)
1 tsp ground coriander
1 tsp dried oregano
2 bay leaves
500ml beef stock
2 tbsp olive oil
Salt and pepper to taste
1 can (400g) kidney beans, drained and rinsed
1 can (400g) black beans, drained and rinsed
Fresh cilantro or parsley, chopped (for garnish)
Sour cream (optional for serving)
Pressure cook 45 mins natural release 15 mins
Stovetop 2 1/2 hours
Slow cooker 5 hours

Looks Awesome. My farm in Georgia was hit hard by Hurricane Helene, still cleaning up my barn that blown away. Parts of my huge shed and all of my barn are in the pond and woods. My pecan orchard was destroyed, I have no more tears to cry now. I am so overwhelmed I dont know where to start. Must pull up my boot straps and begin. Took time to watch this lovely video and a sweet man enjoying !!! I had no cell nor internet for almost two weeks and its still very limited as cell towers fell. God Bless you all ! Hug your families, count your blessings..so much can be taken away so quickly !

Another lovely winter tummy warmer. This is almost my exact recipe that I batch cook & then cool & freeze ( I use double the amount ) ..I like to add a teaspoon of cinnamon,it just adds something quite special. I stove cook mine in a massive pot for around 6 hrs on very low, allowing everything to burst into flavour... Another cracker,Rik..😍..

I had to chuckle when I saw this chili with chunks of meat. Once we ordered chili at a truckstop restaurant in NH. Our friendly waitress immediately told us "Honey, I'm from Texas and that ain't chili. it has hamburger in it. Chili is made with steak!" She gave us a great chuckle and a fond memory. I was from Oklahoma and didn't tell her that in my entire life I never made chili with steak (mostly because my Mom was from NH and never made chili... and by the time I made chili I was living in NH). Funny how many memories we have that are food related. lol Chili looks great, Chef! But like most others no such thing as shin anymore but plenty of other tough cuts to choose from. Shirley in NH

Ah not in your average super market, supermarkets are useless, I once asked the butchers department for some bones to make broth and was told we don't have them its all prepared in a factory somewhere, but any decent butcher will have Shin.

Morrison’s is the only supermarket I know where you can still get shin of beef, shame it’s a great cut for slow cooking. Your chilli looks fab👌🏻

Try the local butcher and sad to say Morrisons that started off a in my locality and ran on quality (this weeks bacon sells next weeks bacon) have sadly gone a little down hill since old Ken gave up the ghost. But local Butchers of get local supplies that haven't been watered down and the quality is far better.

@@BackyardChef Unless you can find an old fashioned butcher in the UK you can’t buy it in a supermarket. They seem to butcher meat quite a different way these days here in the UK. And I hate you can’t find Skirt and Shin or even a good neck of lamb these days. Streak, mince or braising steak seems to be only beef you can buy off the “ shelf”. Drives me nuts!!

I’m with you Rik. You cannot beat shin for flavour but it does have to be cooked long and slow. I have had an Aga for 40 odd years and it does it to perfection in the slow oven. And you cannot beat cooking from scratch. I’m with you there. ❤️

Looks delicious Rik, will definitely make this one!😋👌 Definitely agree on the merits of an electric pressure cooker/instant pot/Casori etc, following your recommendation.👍Mine had it’s maiden voyage last week, a beef stew with onions, canned tomatoes, celery, carrots, swede, 🍅 purée & potatoes, cooked & ready in about an hour, tender beef & delicious! Like you I seared my beef on the cooker top, then sautéd the veg & herbs etc before adding to the P/cooker. Two delicious meals for one, plus another 3 portions, tubbed up & in my freezer for future meals. Delicious, home cooked food, & extremely economical. Tuck in & enjoy your delicious chillie & bean stew …. Fantastic!😋👨🏼‍🍳👌🍲🥰

@@BackyardChef Thank you for quelling my fears of Pressure cookers & your recommendation Rik, most appreciated, I’m pretty sure it will be well used for soups, stews, steamed puddings etc over the coming months!👍 Not sure if you’re aware that M&S are currently selling a Tom Kerrige beef shin stew in their gastropub range priced at £6.00 for an individual 308g serving 😳, that weight includes the carrots & gravy! So it seems Beef Shin might be making a comeback in the UK.

I have to ask-what was the rice? Looked like a bit of red rice in there? The chili looks wonderful. Shank is a lovely cut with tons of flavor. Nice to see it featured here. It's not as common as it once was and that's a shame. Here in the US, there's an ongoing fuss over whether it can be called chili if one uses ground beef (mince) or beans or even tomatoes. Just ask a Texan. And if you really want to spend an afternoon, mention sugar in cornbread and settle in. It's (mostly) good-natured and encouraging to see such pride in a regional dish.

I'd never heard of shin beef until I recently saw Glen & Friends Cooking's "1914 Shin of Beef Stew" video. I thought I'd make that so I went to a butcher and asked about it and they had no idea what I was talking about. They did have some beef chunks on sale so I got a few pounds of that and it was good quality so I'll probably go back and get some more for this. I've never seen a version of beef and bean chili with such large chunks so I'm excited to give it a try; I'd have never thought to try it. Is this a British translation?

Any half decent butcher should have Shin. Depending on your part of the world they might call it different but its the lower leg meat.

Mum and grandma used shin or chuck most of the time for casseroles etc as there was more flavour. I learnt a lot about cooking from scratch from both of them. Looks yummy, we need some warming comfort food, as the UK weather seems to have bypassed autumn and gone straight to winter. 😂 It's freezing and wet again here today 😫

I used to love shin of beef braised slow, but its very hard to get here now I have to travel 20 miles to find a decent butchers, no supermarket will have that, is a sad world now.,

Ye Butchers are far better, but that said I know a local village had nine butchers shops they last I heard they were down to one. People need to use such places more the quality is far better, and Me I would prefer a mouthful of good stuff than a truck load of the rubbish supermarkets sell.

This is very similar to my recipe, except instead of 2 tablespoons of tomato paste I use 2 chipotle peppers in adobo sauce (chopped). Adds a rich chili taste and a little heat to the dish!

If you are lucky enough to get some Shin at the butchers slow cooked in whatever, stew chilli pie etc and you will wonder what you have been missing, makes for exceptional gravy too.

Oh naughty, I am supposed to give red meats fats and salt the big elbow, but I can't die a monk I have to have a little enjoyment. Shin is wonderful when cooked tender and makes for an incredible gravy, health or no health my sort of food 😋. (Small regular doses does wonders for the soul) 😂.

Two new things to ask local butcher beef trimmings and shin, I have a ninja fodi max airfry 15 in 1 so this has pressure cook so is this basically the same as your one pot.

Oxtail Stew. Similar. As a council estate kid was very cheap for parents. Served with bubble and squeak. Not sure oxtail is allowed in many countries.
