Heritage Steel review: pitting the Titanium Series vs the brand new Eater Series

Heritage Steel's a pretty interesting brand and its flagship Titanium Series has the company's history written all over it: the 316Ti inner layer is where the line gets its name and it comes from the era when HS sold "waterless cookware" and it has one main benefit - it reduces salt pitting.
When the brand made the move away from waterless, they continued production in the same factory in Tennessee and kept up some of the aesthetic decisions such as the polished finish. It doesn't appeal to me personally, but I'm sure it does to their historical market.
Their price point is pretty high partially due to their American manufacturing and the owners really seem to be focused on doing right by their workers. That's admirable, but the big question is does that expensive manufacturing improve the consumer's experience? In this case, I'd argue that it doesn't. The units we tested had misaligned lids and poorly installed rivets that we really haven't seen in this market segment before. Maybe those are a thing of the past though, because our test units from their new Eater Series didn't have any of those flaws.
When it comes down to it, the Titanium Series tells the history of Heritage Steel, but I'm not so sure it should be part of its future - and a big part of that is because of how good the Eater Series is by comparison.
The Eater Series takes all the standard Heritage Steel forms from their Titanium Series and brings them up-to-date with modern finishes and design touches. It skips the 316Ti inner layer, and that appears to help it compete well on price against brands like Made In and represents a good price-for-performance upgrade over our budget favorites: Goldilocks.
The big question to me is: "how much do you like the idea of having Eater.com in your kitchen?"

Thanks for the review, was just about to buy the Eater and gonna go ahead and give it a try. I was a bit confused if I should do the titanium instead but your video compelled me to stick with the Eater. I also read titanium isn't the best for even heating.

Neither, really. Both require the same behaviors to release proteins.

So if I fry an egg with a little olive oil at med-low heat will I still have to scrape it off because it's stuck to the pan?🤔

In a lot of cases, yup. Stainless can get pretty nonstick, but takes a lot of heat to do so. I wouldn't generally recommend this type of pan for that, even if it's technically capable because you lose a lot of control.

"Over a 10 year period nearly every pan will pit to where the aluminum core is exposed." This is not true. Where did you find this information? My parents have a set of stainless steel all clad from the 90s, it is heavily used and in great condition.

Didn't "find" it per se. It's just true of stainless steel and how it reacts with salt - especially at relatively low temps. This may not be true of everyone's pans bc not everyone actually seasons their food well in the pan, but as a conservative assessment of wear over time I believe that statement holds up.

​@@cultflav They season their food in the pan including pasta water. I also have a set of all clad stainless and there is no pitting at all. Heritage is a great company and I recommend any of their products. I have never heard of anyone having this issue with stainless steel pans from companies like all clad, deymeyer, made in, or heritage. To do this to stainless steel would have to have a long duration of continuous exposure to salt. Maybe people were leaving food in the pans or not cleaning it. I clean my pans as soon as I am finished cooking. Anyway, interesting property of titanium without a doubt.
