I just happened to have all of the ingredients to make the icing, so I decided to go for it. (I had to use vanilla Greek yogurt instead) Holy crap that was good! I’ll have to make pancakes just to eat it tomorrow, but I would definitely use that as icing for cupcakes in the future. Life. Changed. 🙌

What is the purpose of the coconut flour? I feel that can be totally eliminated if you’re already using 160G of some type of pancake mix?

What is 160g? Weight or volume?

I would put Peanut Butter all over that then a nice layer of banana rounds, some corn flakes for the added crunch THEN of course I can’t forget my lady Mrs. Butter-worth’s ( sugar free of course) mmmmm HELL YEAH!!!
