You mostly play on instinct, based on what you know about the position, and take the most time on moments where you feel you might be better if you find the right move or tactic, which is again based on a feeling/intuition

It's like playing guitar or any instrument for that matter or if you don't play any, think of it like driving a car manually. In the beginning, you'll think about what gear to put the car in and you sometimes even forget what gear you in but as you drive more and more and become experienced, it all becomes naturally and you don't think about gears while driving. It is similar here as chess has become second nature to them.

Actually accost means to approach and address someone boldly or aggressively. So you can use it in that sense, your pieces are accosting the pawn in a sense, but no, it does not mean to apprehend.
