Would say the Gladiator, needs 35's for it's wheel base or brake over angle for trail riding not strict low key touring(295/70r17 for that or 255/80r17), Yokohama G0003 MT for less fuel consumption and more off road grip then the Maxxis RAZR MT, Nitto Trail Grappler MT in 35x11.50r17 if it can be sorted for stock sized wheels(17×7.5) or 12.50's , they have a mild tread pattern and are tough/heavy or Mickey Thompson Baja Boss MT for next level "touring". Mickey Thompson Baja Boss AT(heavier) or Yokohama GEOLANDAR AT XD G017(slightly longer lasting tread compound, slightly less space between tread blocks) are good AT choices. Wish the Ranger had a rear diff lock🤔🙁 265/85r17 would be my ideal Gladiator Rubicon tyre size(the typical 10.50 is a 255mm width, the Nitto Trail Grappler MT/Toyo Open Country AT3 is 11.4 on the rated 9 inch wide wheel, on a 7.5 that would be 10.8(11.4 - .6(3×.2 or for every .5 wheel width change the tyre width changes .2 inches or 5mm) and will shrink to 10.5 to 10.75 without the tyres max pressure) for most "touring" situations, but individual discression might point to 12.50 width tyres.
