the reasons Japan folded their metal so many times was the only access to iron they had was in iron sand, which they smelted in a bloom kiln. The extremely skilled blacksmiths had to spend months working the raw steel before they got it to a state which a sword could be forged. The Europeans didn't need to fold their iron that much because Europe is filled to the brim with high quality iron easily made into steel which is why Europe had plate armor, while Japan had laminar armor. The good steel was reserved for weapons, and tools.
