I'm so glad to hear about raw pack potatoes! Thank you! Yesterday, I canned 25 lb of potatoes, blanching them! What a pain! I'm 67 and if I can save steps and still have a good, safe food, I'm all for it! My back thanks me for it too! 🤗

I use my raw packed canned potato’s for fried potatoes with onions, they don’t brown but everyone raves about them. Delicious!

Hi Heidi! I'm a cook and baker (by trade) and I raw-pack my potatoes when I can them (and we have a TON of potatoes every year!!!) and I DO actually roast them (in a hot oven 400 or more) with a good oil (olive or avocado or coconut) and mix dried herbs and onions with them---THEY'RE AWESOME! Try it for a different way---we also mash them with a good fat and seasonings...have a blessed day out there--and thank you so much for your great videos..

I’ve only been canning a couple of years, but using the hot pack method has worked well for me. Potatoes are still firm and I often drain them, season them, and air fry them. They work well that way.

So glad I saw this video I just bought 50 lb of potatoes yesterday for $4 on a Safeway sale. I am fairly new to counting so finding easier ways that make the finished product better is such an amazing thing and I have tried so many things that you have said in your videos and have had great success with the things that you have said. I have been raw packing for years, so much essier. Plus, the texture and taste so much better. Going too finish up 2 more rows of potatoes. Pontiacs, huge results of mulching with straw and dirt.

This was very helpful. I just started pressure canning this year and I'm about to tackle a ten pound bag of potatoes that I got on sale yesterday. I can totally relate to wanting to try to can everything, lol.

Perfect for answering the questions and comparison. My T-Fal canner book says always hot pack potatoes but all the videos i watched on you tube were cold packed. So I think you settled it. Others are also saying hot pack is yucky.

So glad to hear this. Its also a lot less work. There is not any bacteria or virus that 240 degrees F (116 degrees C.) will not kill. That's potato salad dressing looks great to me. Thanks for this you saved me a lot of time and effort. Linda does good work as well. Thanks again.

One thing to note is raw packed does make the liquid more starchy, but it is not a big deal, I would rather deal with the excess starch in the liquid (that rinses off easy enough) and have a better texture and flavor :D

@@RainCountryHomestead that's amazing to know that the meat can stay so good for so long. I know this is a tater video, but do u prefer to soak beans or no soak? I soaked mine for 1.5 days ( they are 2.5 yrs old dry storage beans ) the black beans and pintos are fantastic. I added a tiny bit of bacon fat to jars. The flavor and texture is excellent. One weird thing tho is, It took SOOOO much longer for my canner to come down off pressure with the beans than the meats. Im still new to Canning, so this surprised me. It took hours before I could remove canner lid. Do u notice this type of thing with certain foods? Thank u so much for sharing 💓.

Yep, I hear ya', it took me years go get over that fear but really, once you do it, you will be so glad you did and want to can everything so you may want to tell your family and pets to hide once you do or they may end up in there too! hahaha

Should have soaked the raw pack potatoes overnight to help pull starch out, that way you don’t have the thick starchy gel.

Loved it. I tried potatoes once (I'm new to canning) and blanched them first, but they siphoned and got mushy! They sealed but I was SO disappointed! I will try raw packing instead to see if I can do better!

Good video! I canned my first batch of French fries a couple days ago with the salt added, RAW pack. I found they have to be handled carefully when frying, but we were all very pleased with the results. I’m trying to figure out a way to store up a bunch of potatoes. I just watched your dehydrated mashed potato video which was also very good!

I am watching your video because I am going to can about 50#'s of potatoes. You are right, why blench potatoes that are going to cook in the jar, I am going to throw in a teaspoon of cider vinegar so the potatoes don't turn into mush. Thank you, I grateful for your experiment of the end results.

Now this is right on time!! I have some potatoes I need to get done and wondered which method I'd prefer. I know I like them to be a bit firmer in texture but there are so many conflicting videos. Heidi: I decided to go rogue and can my potatoes using the raw pack method. They look good, only time and taste tests will tell. I have been canning for over 40 years and this was the first time I decided to disregard the USDA recommendations. I just could not see any way that the potatoes would be anything other than mush if they were precooked prior to pressure canning for 40 minutes. This is not an indorsement for disregarding tested methods especially if anyone reading this is a new home canner.

the eggs do great for baking, and if you want to seperate the yolks and freeze in trays, add a pinch ofsalt or sugar so it doesnt go grainy. they work great . and i have always canned potatoes raw pack, and also keep skins on. since they are organic, no worries. and they are EXCELLENT fried....

Thank you for the tips on the eggs. Patrick does not like potato skins at all, that is why I always peel them. I did fry some with some other veggies and it was great. I was having the hardest time just not eating them straight from the jar! haha

I’m a canner. I follow rules. I canned all sorts of potatoes through the years. Raw pack, while easiest, yields an inferior product as opposed to par boiling (appropriately) the potatoes (reds are my favorite to can), which removes the excess starch and gives you pretty jars of potatoes in clear liquid.

To each their own. My side by side comparison of raw packed with the boiled ones proved the raw packed has a much better flavor. For those who prefer them the other way, that is the way they should do it. I am not canning to win any blue ribbon, I am canning to put up food for hard times and to get us through winter, so the starch in the jar does not matter to me. It rinses away easily enough. I also can what I grow or happen to come into an abundance of. We prefer yellow potatoes over red or white so yellow is what I grow.

From what I understand now, one of the reasons people do that is to prevent the liquid from getting so starchy, but mine still got starchy even with the precooked method. Raw packed is so much better and easier! :D

I don't like the professionally done vids, or a lot of the people who make them. Some of those people are super annoying. You're nice, down to earth, I like that you're not trying to be like them. When I was first learning about it, all the info in video and text I kept coming across spoke of cooking them a bit first, made no sense to me but I figured I had better go by what I was being "taught". Glad I decided to try what I thought made more sense! haha

I do raw pack, less mush. I also soak 2 or 3 times to get out some of the starch.

@Katherine George ... you must have read my mind! I haven't canned potatoes for years, but want to do it again. What I was wondering was about the starch. So I was really glad to see your comment! What I'm wondering is 1) how long for each soak? 2) I 'm assuming you rinsed too... 3) did you put anything in the soaking water? 4) was your finished product more of a clear water doing the soak? @@sandijammes7761 I put the peeled and cut up potatoes in a large bowl and let them sit for about an hour, poured out that water and filled the bowl up and added a little lemon juice and let it sit for a while. I think I did it 3 times, and did a lot of other things while waiting. Once I even did a soak over night as well.

Thank you for such a great informative video about canning potatoes ! I will definitely try the cold pack. Quick question…. where do you keep those eggs that you air-packed in the freezer or fridge?

This is an old video so without watching it I can only assume this was back when I was using foodsaver bags (which I do not use foodsaver bags or machine anymore) and if so, I was keeping them in the freezer. I know freeze in 4 ounce jars or dehydrate them

Thanks! It was part of a set of four found at a garage sale recently and each one is different. One has peppers, another has tomatoes and the last one has corn. I just fell in love with them. They actually were set up for hanging on the wall but they are nice and sturdy and I would rather use them than just look at them.

I have taken raw veggies and just cleaned them let them air dry and then make seal-a-meal bags of servings for 2. When I take them out I'll put the bag in boiling water and they taste fresh picked. My green beans I'll add garlic pieces and slivered almonds then just cook in the bag. I even in my last batch added cooked bacon to the green beans :) I recently made dinner for 4 at home to bring to a sick family member (roast chicken, little red potatoes, cauliflower in a cream sauce) I put everything in seal-a-meal bags and just put it all in a big stock pot of hot water to reheat. No cleaning of pots for the visit and a hot home cooked meal.

I've never used a pressure canner. I'm a little nervous about it but I'm ready. I'm going to start off with the 16 qt canner. Thank you for sharing about the potatoes, I've never cared for canned potatoes, I wonder if cold pack makes the flavor better.

I found the flavor to be MUCH better cold/raw packed. Though it does leave more starch in the jar, it will be the only way I do it from now on. I think most of us go through a period of being nervous about pressure canning but once you start, you will quickly become addicted :D

I’m ready to can my potatoes like you did by cold packing. Do you have a video showing the process? If not, would you let me know if you put the cold potatoes in a warm jar with hot water? Was the canner already warm too? Thank you so much.

I do not have a video at this time, no, but whenever I raw pack, everything goes into a room temperature jar with room temp water. The water in the canner is the same temp when I add the jars then I allow them all to heat up together to prevent breakage

They are ok for making mashed potatoes but find I prefer them best for making potato salad

Hi heidi, thank you for doing this comparison of potatoes. I raw packed but I have so much starch in jar. The liquid just thickened up. I opened a jar and had to rinse them well. I used white potatoes. What kind of potatoes did you can?

Yes, they do get very starchy but I would rather have that and have the better flavor and texture. I used yellow potatoes. Mine did not get as starchy until I stuck the jar I opened here into the fridge for later use.
