Ingredients for 8 donuts:
Dough:
• 500 g of flour 1
• 250 ml of warm milk
• 40 g of butter at room temperature
• 12 g of fresh brewer's yeast (1/2 cube)
• 1 teaspoon of salt
• A pinch of sugar
• 2 liters of water
• 80 g of sodium bicarbonate
• 1 tablespoon of salt
Moreover:
• 1 tablespoon of coarse salt
• 1 teaspoon of sesame seeds
• 20 g of Parmesan cheese

💡There are 2 variants of prezel, Bavarian and Swabian the one we prepare today. Compared to the Bavarian pretzel, the Swabian pretzel is thin on the "arms" and thicker on the "belly". Also, the dough on the "belly" does not burst in the oven, but is created by cutting with the knife before baking 😊 To make it as simple as possible, I use baking soda and salt.
