When I make my grape wine, I do not cook it like my mom does her wine. I like to leave it natural as I just Google this "Too much heat for too much time will not only kill the bacteria and denature harmful enzymes, but it will also denature proteins and other compounds in the fruit. It can also cause "cooked flavors" in the final wine, which are not preferred by consumers." How much cooking will kill the good part in wine? Can one make banana wine without cooking it?

Great video... I am not an expert but have made wine for years from grapes to pressed apple juice. I let my wine ferment for month adding sugar to get that 15 to 18% without making too sweet. Very tricky or it turns out too sweet. If it is too sweet, I will mix it with sprite to make a wine-cooler. I have a big box of bananas to try it out but I want a very high alcohol content in it. ... From Google.. Myth: is potent. Fact: Most contains from 10 to 12 percent alcohol and that is what you'll when you use a kit. However fermented alcoholic beverages reach a maximum of about 20 percent alcohol by volume (and that is with some difficulty).

I would like to share my method I am using hardcap jar and using narrow but thick pipe (normally used in water purifier and ROs). Make a small hole in jar cap and insert pipe. Put mseal, if required on jar cap. Put another end of pipe in a water bottle (ensure this end is under water). This is how I am fermenting my wine and getting excellent results. Ingredients of my wine is just crushed black grapes and nothing else. No yeast, no sugar and no water. Ferment the juice till you get bubbles in water bottle. Filter it and put in glass bottles with air tight cap. After couple of days, you will find that dirt settled in bottom on bottle. Use same kind of pipe and take out clear part. You will get real taste of wine.

---Help Requested--- I brewed Cranberry wine about a month ago with ' real' brand cranberry juice and regular yeast. Brewed it in dark atmosphere with proper airlock facility, after a week i filtered the yeast out of the brew via muslin cloth. For few days i still saw bubbles rising from the bottom in my brew, it's been a month now and i haven't consumed even a sip of it. Today i saw some kind of weird thing at the bottom like you get layer on milk (can't explain in words) i took a sip and it kinda tastes harder than before. Is it just aging or has the brew been ruined, now i wanna consume the wine but don't know whether it'll get me into hospital or high???

Smell and taste was also like wine. But I didn't find any aroma of banana or kismis in final product. I was doubtful of that much kick. Also I am still doubtful about metenol that should be produced in this process but that was not seperated. Overall I consumed the wine and still alive. I will try again.
