You are correct about not needing a smoker for cold smoking. Many people have asked me what type of smoker I'm using for my cheese. I tell them I just use my Weber grill. One note I will pass on to others, the softer the cheese, the more smoke it absorbs.

My vertical smoker starts at 80 degrees so I smoke at 86 works perfect

If you let it set for 10 days you will see a difference as the smoke works through the Cheese also with Havarti Cheese or the Cheese that are more dense, it will take the smoke 2 months to work through them because of the moisture of the cheese.

You should try the smoker tube with bacon(we cold smoke our bacon in uk)

Great video bud ! I always cold smoke my cheese for about 4 hours as well, and then air it out for half a day then vacuum seal it for a few weeks before eating. Today I'm trying something different. I cold smoked some cheddar last week for about 4 hours with Cherry pucks for my Bradley w/Cold smoker attachment. Now, I've taken a couple chunks that have sat for the week in the fridge vacuum sealed and put back in the smoker and I'm going to try double smoking it. Going to try 4-5 hours of maple pucks this go around. Both are light smoke, and should pair well with the cheese. Not sure if it'll be overpowering or not, or maybe I'll just have to let it sit for an extra couple weeks to mellow out. I just want to try and get a bit of a smoke rind onto it and try that. I see double smoked cheeses at the store and holy cow are they even more expensive than regular smoked cheese. Better try it right ? I'll let you know how it turns out ! Only doing a couple chunks in case it sucks..... then I;m not wasting too much. Got the rest of the tray full of semi-sweet chocolate chips. Will cold smoke those for 2.5-3 hours. Smoked chocolate chip cookies are one my favourite things ever out of the smoker !!!!!! Just need to use the non-stick matts so they don't fall through of course.

Please let me know how it comes out. I would be afraid of over smoking cheese if I did it twice, but maybe it will be delicious. I hope it is the best cheese you ever tasted! Thanks for stopping by!

Manchester England lol, I'm from the states but have lived in the uk and working in Manchester just over 5yrs now.. no one has ever said Manchester uk... when I saw that 4 pack sitting there i thought wait a minute that's not an American beer. Haha

Well if you vacuum seal and keep in the fridge I would say you could keep it for many months. Visually inspect it looking for mold or other indications that it might be going bad before eating it. Thanks for stopping by!
