Thandai Rasmalai
(Holi SPL Dessert)
Prep time - 30 mins
Cooking time - 30 mins
Makes - 190 gms 22 gms each 10 nos
Ingredients
For Thandai Masala
Almonds (बादाम) - ¼ cup
Cashew Nuts (काजू) - ¼ cup
Pista (पिस्ता) - ¼ cup
Cardamom (इलाइची) - 12-15 nos
Cinnamon 2” stick (दालचीनी) - 1 no
Peppercorns (काली मिर्च) - 12-15 nos
Fennel Seeds (सौंफ़) - 1½ tbsp
Watermelon seeds (तरबूज़ के बीज) - 2 tbsp
Poppy Seeds (खस खस) - 2 tbsp
Nutmeg (जायफल) - a tiny piece or ½ tsp powdered
Dried Rose Petals (सूखी गुलाब पंखुड़ी) - 4 tbsp
Saffron strands (केसर) - a generous pinch
For Rasmalai
Ingredients
For Chenna
Cow milk (गाय) - 1 lt
Vinegar (सिरका) - 2-3 tbsp
Water (पानी) - a dash
For Syrup
Sugar (चीनी) - ½ kg/ 2½ cups
Water (पानी) - 250 ml/ 1 cup
All purpose flour (मैदा) - 1½ tbsp
Water (पानी) - a dash
For Flavored milk
Milk, full fat (दूध) - 500ml
Sugar (चीनी) - 100 gms/ ½ cup
Rose water (गुलाब जल) - 1 tbsp
Saffron, dissolved (केसर) - 4 tbsp
Thandai Masala (ठंडाई मसाला) - 2 tbsp
For Garnish
Pista Chopped (पिस्ता) - handful
Almonds chopped (बादाम) - handful
Thandai masala (ठंडाई मसाला) - 1 tsp
Note - Cheesecloth or muslin cloth - a large piece
