Kefir is an incredible probiotic fermented beverage that was an essential component of my gut microbiome optimizing protocol that allowed me to achieve total resolution of a severe case of Ulcerative Colitis nearly four years ago. This is how I make it.

The little "cage" inside to hold the kefir kernels is so clever! It's such a big job to strain out the kefir "kernels" and to keep everything perfectly clean. I'm going to try a tea buddy thingy and put the kefir solids in there inside the jar. Thanks for showing us.

Hi, when you first started drinking kefir did you experience any uc symptoms? Like diarrhea or mucus? I'm scared of making things worse. Also, how long do you ferment your kefir?
@cheayunju
@cheayunju Год назад
No, I didn't have any strong uc symptoms. It seemed to help. I started making it from the microbiota kit that I researched to be the easiest. I also made a lot of other dietary changes. My gut was back to normal, but after a buffet meal with my wife where I had a lot of fancy desserts and ice cream, I had extreme bowel bleeding the next day after work. That was when I realized processed/ added sugar was causing the flair ups. I quit sugar that day improved quickly. Since then I have avoided added suger, but natural sugar in fruit doesn't seem to make a problem. Sorry tangent. Depending on temperature, here in Korea I ferment my milk kefir (just made from standard basic brand full fat Seoul Milk) 24 hrs in spring and summer and 48 hrs in winter and fall, and adjust based on the way it looks in the jar. If you can find a sugarless product in store it might be easier. When I started making kefir, the only thing sold in Korea had a lot of sugar added to it (even the Cheetos are sweet here^o^). I've since found a Russian/Uzbek enclave neighborhood with several shops where I can buy some branded and fresh local kefirs. But if you're worried about reaction, I suggest just find a pure, completely sugar-free kefir and start with just half a cup per day and see how it goes^^ I'm used to it now, so I just chug it^^lol

Yeah, how much I use varies because they grow quickly. I ideally like to use a tablespoon and a half per two cups of milk maybe slightly less. In 12 hours it's very tart and the cream is separating. I recently ate a tablespoon of grains because in 12 hours it was so fermented the clear liquid was bubbling over. And I don't want to drink more kefir than a cup and a half twice a day.
@cheayunju
@cheayunju Год назад
Just my atypical experience: I didn't have uc until I was 47. I suddenly started having joint pain, then uveitis (swollen eye), and then severe ulcerative colitis and anemia. It came out of nowhere. UC typically starts in young people, but mine was very late onset. I often drank beer after work, so I assumed that was the cause. I cut it, but the problem continued. My doctor (in Korea) prescribed mesalazine as an anti-inflammatory for the gut. That helped but flares kept occurring. At one point I was fine. My wife and I went to this fancy 100 dollar buffet and flipped out. I ate a lot of small cakes and rich ice cream for dessert. The next day, bloody blowout. That's when I realized my biggest trigger for flare was simply processed sugar. It's like I'm allergic now. A piece of cake will give me full body joint inflammation and more will cause the uc. So, for me, completely quitting sugar and boosting my gut with kefir got me pretty much back to normal. I think my late-age uc was a symptom of leaky gut caused by processed sugar and alcohol. I still take mesalazine as my gastro prescribes, but compared to the US it is quite easy in Korea. It's only about $40 for 2 months of the oral drug. My doc really pushed using the suppositories at first, and I tried them, but that is a kinda unpleasant way to take medicine^^

@@anushay1874(please do a research first because I'm not a doctor or an expert on digestive issues. I just tell you my experience with kefir and other supplements that really help me through my problems) I think you have a histamine intolerance. You should hold on the kefir first. Maybe, you can cut all sugar and carbs (no sugar and carbs in any forms for 2-4 weeks.) In this period, you have to kill and cleanse any pathogen from your digestive systems. Use probiotic capsules, fish oils, NAC, pau d'arco capsule, magnesium supplement and berberine capsules. In this cleanse period (2-4 weeks) you should feel a die off reactions from crampy feeling, diarrhea, headache, etc. And will get better if you still on no sugar and carbs diet with that supplement. Then you can start drink kefir, introduce it slowly, maybe 1 glass per day. I hope that will help. But please, do you research first. Because what works on me, can be different for other people. Good luck.

hello, i have a question. i have to take penicillin everyday because i take an immunosuppressant medicine for a kidney disease. i know that antibiotics tho can kill good bacteria, so do u think i'd have to try to get in even more probiotics each day? it's quite a bad situation im in, wish i didn't have to take them :(

Hi. I see you always eat fermented pickles. Do you make them yourself? I just realised that pickles made with vinegar or other acids don't actually have probiotics. There are almost no pickles made with brine only. Please advise.
