I’ve recently started drinking and making milk and water kefir. I’ve made yogurt for years. I’ve had cancer where I had surgery, radiation, and chemotherapy. The cancer died, and I was left with gut issues. This next part isn’t for everyone, so .. I was left with a very slow moving gut. Loads of laxatives were a way of life. During Covid-19, I tried milk kefir. I pooped like a normal person the day after I had kefir BEFORE I had my laxatives!! Water kefir does the same. I haven’t had to use a laxative since! There are other good things , but this for me is amazing! Sorry for the gross stuff.

@albertvillemaire5033
@albertvillemaire5033 2 года назад
@@adeelmehmood7439 You can start with as little as a spoonful a day. Some are sensitive to its healthfulness. Others can do it by the cupful right off the bat. Since it provides us tryptophan which helps us make more serotonin and sleep better, before bed is perfect. But really, anytime of day is great! (I first started using it to cure my feral-born cat's death-smelling gingivitis, and fell in love with it just by licking the spoon! I got lazy after I thought she was long cured, but after a year without, she suddenly lost a tooth! She has a serious heart-valve defect, so I'm afraid to take her to the vet cuz they might stop her heart again. I will keep her on it for the rest of her minus-one-fang life!) I love making an amazing Keto-friendly mango kefir lassi: just a cup of kefir, half a mango, a Tablespoon or 3 of chia seed, some cardamom to taste, and sweetened with magical allulose which blocks our metabolism from storing fructose as fat! (stevia or inulin would also be good sweetener choices but won't block the fructose for keto/low carb.) Be sure to let the chia soak 5-20 minutes in the kefir to thicken it up nicely. Yum! If you like it, (seriously, try my lassi!) get some kefir milk 'grains' online or in some healthfood stores. it's way cheaper to make yourself with whole milk, but you need to keep making it at least every other day or so, since they are living critters that have to eat. You can also learn how to store them, for vacations, but that almost seems like more work and I am supremely lazy. Lol. Good luck!

kefir is from africa, from europe, from 'merica... Kefir is just randomly "fermented milk" ( not really but somewhat true) people drink it everywhere from ancient times
@RovingPunster
@RovingPunster 5 лет назад
@@slowfall8957 Kefir is from EVERYWHERE that milk is made ... it is a byproduct of the effect of local biomes on a fermentable product, and it will happen all on its own unless steps are taken to prevent it. A notable region you omit, for example, is mongolia, where raw mares milk was allowed to ferment and was consumed on a daily basis. They didnt call it kefir, but that is essentially what it was, albeit from horse milk.

@@christianlee8558 The flavor is more complex, and tart, than yogurt, and the texture is different too ... it is literally impossible not to notice you are drinking something biologically active. This is very interesting. I started learning about probiotics when my grandmother contracted c. diff. in the hospital. No one warned me that this could happen, yet they knew immediately when it happened. Pet peeve about hospitals -- they seem to give people a lot of infections you don't get at home. My Grandma would not have drunk kefir if she had known what it was, but I could add a small amount to milk and get her to drink it that way. I don't think she would have survived that c. diff. if not for being able to give her kefir and other probiotics.

C-diff is a bacterial infection in the intestine. It is a horrible thing to go through. I had surgery on my lower intestine which caused bad bacteria to take over because of the heavy duty antibiotics I was on. Took about 4 months to get over it by eating sauerkraut, plain Greek yogurt & washing my house down with bleach water. You can die from it since it hits you with about 15 bouts of horrible diarrhea daily. That was 4 yrs ago & I have recovered since my primary doctor was right in it when I got out of the hospital. Fantastic to be over it.

@@vesselfit2use Ferment and strain out the grains as normal. Then I add 1L of cream and (depending on ambient temperature) I leave the 2nd ferment for up to 4 days until the curds and whey are nicely separated. A note here - if you use milk, it will turn out a bit sweeter. If you use cream, it will be more sour, but also much richer flavour. Then I scoop out most of the curds and strain out the whey. I keep the whey to add to smoothies and put on my dogs' food. The curds then go into some cheesecloth in a strainer. I make sure the curds are fully covered, stick a 500g weight on top and then let more whey drain out in the fridge for 24h (this extra time to strain AND adding the weight makes the cheese stiffer and less prone to becoming "watery"). Then I plop out the cream cheese into a sealable container and season it. Leave it for a couple days so that the season can draw into the cheese. Usually 2-4 days. The cream cheese REALLY pulls in flavour, so be careful with the amounts you use. I love garlic, so I added a heaping tablespoon. It infused very well. Goes lovely on potatoes and roast veg. My other favourite flavouring was a hint of italian herbs and crushed chilies. The chili flavour REALLY pulls into the cheese, so be careful with that :D Gotta be careful with the herbs as well; some infuse very well and can totally overwhelm the taste. It can last a couple weeks in the fridge if you decant it into a clean container every couple days. I change to a new container once a week. One batch lasts me about a month.

There is no way of knowing the exact macro, because it's homemade and even the slightest difference in conditions can and will change the macros. I found a comment that someone stated that if you second ferment, it is around 4g carbs, so they count it as that. My next batch in the morning is going to be set up for a second ferment.

@tonnia62
@tonnia62 5 лет назад
Marlene Jackson I have several kefir groups on Facebook that am in and it has been said that 2nd fermented kefir has approximately 4 grams of carbs per cup. Of course with homemade kefir carbs may vary with each fermentation depending on the time fermented and the temperature of the room. I count mine as the 4 carbs per cup. Since kefir is so very good for you i feel like it is well worth the carbs.

If I go on holiday and can't get *my yoghurt* I really miss it. Now I've started to make kefir and I'm getting used to that routine also. But I am a busy person and I am wondering is there any benefit at all in continuing to make yoghurt if I am also taking my daily kefir? Because if not, then I can just quit with the yoghurt-making. But I am so accustomed to making yoghurt that I would continue if there is any health benefit. Is there?

Store bought kefir, as a ready to drink product, has not completely fermented, leaving quite a bit of lactose (milk sugar) in the solution. This provides a much more palatable taste for people still on a high sugar and starch diets. When you can find kefir, it is almost always lowfat which makes its acidic nature even more tart. To optimize kifer for a keto diet, set out in a warm room or area to finish fermenting. Better yet, combine the norma quart size of kefir with a full fat gallon of milk, and then set out in clean glass jars (2 80 oz pickle jars work great) to ferment. I wait until the milk separates into curds and whey. The whey will contain most of the lactic acid and is full of probiotics. I am beginning to experiment with the whey/lactic acid/probiotics as a starter for fermented vegetables. The kefir that is left is then worked gently through a sieve/colander to separate out the kefir grains, creating a nice thick creamy kefir, not as acidic as the whey solution and sweeter tasting due to the concentration of cream. Excess kefir grains are given away, or more normally, added as a very healthy treat to the dog's food. I'm new to fermenting vegetables and anxious to see how using kefir whey will differ from the normal brine fermented vegetables.
