I drank a lot of kombucha last night and just realized why I couldn't get to sleep. Didn't make the caffeine connection until after the fact. I have *a lot* of trouble sleeping through the night as it is and noticed that I was actually getting 8-9 hours lately doing nothing different outside of taking magnesium 3x a day and my homemade yogurt. Definitely relegating the kombucha intake to before 2PM.

I've watched dozens upon dozens of kombucha making videos and it's the first one that actually had a green tea kombucha AND side by side with a black tea kombucha... which gave me the idea that if I want to make fancy colored kombucha for cocktails, I might want to use green tea to make the fruits color more prominent. Like, if I want to make white or pink kombucha.

You can also find white tea, it's even lighter, in color and flavor. The very best for letting fruit flavors and colors shine through.

@@KatieCooksandCrafts Thanks, I'll look into it. For now, I'm just waiting for my first ever batch, so I went with the safest black tea + refined sugar recipe, so it'll be some time before I start experimenting... but at least I have something to look towards ;)

Also, another thing I could try is cold brew (I drink cold brewed teas a lot). I'm just worried if I go too light on the brew, the SCOBY might not get enough coffeine and other nutrients it needs.

I found your video to be very helpful & I will be flavoring mine with the frozen berries. Love the puréed fruit in ice cube trays as well, very easy way to flavor. I haven’t made kombucha in over a year & wanted to watch a video to refresh my memory, this video was great, thanks so much!

Your hot tap water can contain metallic compounds from the pipes transporting it, it's a good idea to not cook with it but actually use the cold water instead.

Someone else on RU-vid said to burp the kombucha, but I think she was wrong! I lost nearly half my kombucha to explosive openings one day doing that, only to find out that once they are in the fridge for a day or so it settles the fizz down. So now I don't burp them anymore and save my burping for things like fermented vegetables! Also, for me I find that if the internal temperature in my home is over 77 degrees it is best to set them aside for a second ferment no more than 18 hours or so, or they get too explosive!

Burping can give you a peek into what's going on during the second ferment but it's not essential by any means. There are plenty of clues to let you know when your kombucha is ready. I think there is a fear of bottle bombs, luckily I've never experienced that, despite having VERY fizzy booch.

I got my question answered. I just found your site and before I was questioning why my 1st batch was fizzy and if it was okay. When I first started brewing it was not fizzy and all the sudden it started getting fizzy on 1st brew

Wow...best video explaining kombucha that, simply put, I have ever watched!! Thank you...very smart, articulate, and enjoyable to listen to! One friendly suggestion, I would consider using filtered water and then boiling it or filtered water and an electric water kettle. Also, do you make fermented veggies, sauerkraut? Please consider making a video on fermenting veggies. Thanks for the great video, keep up the great work!

Amazing video! Thank you so much. I am making my very first batch. Where do you put your jars for the first brew? I'm seeing so much conflicting info. What I learned not to do was to not put it in a cabinet. The lack of proper air flow was really slowing things down

mine are on the counter. I am surprised a cabinet affected anything. Every little place has its own microclimate so maybe it was just a little cooler

My chickens and dog all love the Scooby pellicles when I have extras that don't sell. I swear kombucha makes me feel so much better in general, and am addicted to the taste 😂. Thank you for such an in depth video!

Would you please tell me how the first kombucha was made? I mean i have no starter tea or scooby then how kombucha can be made? Fermented tea can be used as a starter and scooby /mother of vinegar can be for kombucha tea.

Do you have to strerelize your bottles and jars berfore using them at the beginning of every batch you make ? Exellent video i just suscribed to your channel.

This is one of those things that you just have to do what makes your comfortable. Some people want to sterilize with boiling water, or diluted bleach solution, or something like star-san every batch. I don't. The bottles are clean (washed with warm soapy water) but not sterilized. If I had a continuing problem with mold or off flavors, I might consider sterilizing by routine.

Great video, thanks for all the tips! I'm trying to make kombucha myself, I grew the Scoby using GT's original, but when I put it in the new jar it doesn't float, it went down like 1 inch from the bottom. Now after 6 days it looks like a new Scoby is growing on the top. Is that ok?

That is perfectly fine. If they are thin you can use both in your next batch.

Katie, I am so happy I found your video. I have been researching all these other videos and they do not give all the tips and tricks you do. I bought my kit from Amazon a month ago and been to scared to make my own. I guess I am scared it will not turn out well. I am so glad you explained first and second fermentation. I make less in the summer because it ferments so fast I would end up with too many bottles at once. Let if know if you have any questions once you get yours up and running

Can you cut a pellicle to fit a smaller jar? How long does it take for your 1st fermentation with that size jar? And is that a quart sized jar? Thank you.

Yes you can cut it or tear it. My first ferment take about 6 days which is shorter than most tutorials I've seen but it's more important to look and taste your brew and less important to count days. I brew in half gallon and quart jars. Larger jars also work but can be unwieldy to pour, so keep that in mind.

When refrigerated kombucha still ferments just more slowly. Keep this in mind when storing for longer periods as it will still build carbonation and will need burped occasionally, also it is still eating the sugars in the brew so the longer it sits the dryer flavor it will have, keep this in mind as you don't want to drink vinegar unless you like that sort of thing. You can also brew bucha to have a higher alchohol content through proper fermentation but I don't suggest this as it kills the flavors and most of the probiotics which is the main reason for drinking kombucha in the first place. You risk contaminating the scoby, over feeding the yeast leading to an unbalanced fermentation or something else unexpected.

After the second fermentation, do you have to “ pop” the lids open or can you just put them in the fridge after 3-4 days? ( to not have an explosion)?

I have never had a bottle explode. It can happen but as long as you are using quality bottles I would say exploding bottles is rare. I burp the bottles to see how fizzy the kombucha is getting. Usually only burp one, extrapolate that to the other bottles and determine if they are ready to put in the fridge. The burped bottle might get another 12 to 24 hours on the counter to rebuild the fizz lost during the fizz check. If I'm satisfied with the fizz check I will put the unburped bottles into the fridge having never been burped. So, no, you don't have to burp. But it can give you helpful info. Does that answer your question?
